if I may make some observations:
adding frontal lateral area will increase the need for aft lateral area in the form of vertical stabilizer.
the side area is useful for losing kinetic energy in a side slip (cross controlled condition). otherwise, not very useful.
if you notice the example of the bike, the leading edge is rounded, (relatively blunt) and the trailing edge is fine. So your plane would benefit from the same design details.
it looks like in the video that the airplane is in a skid during turns. anything but coordinated flight is sideways and has a drag penalty.
have you noticed vibration with flaps deployed and power on? I think I can hear it on takeoff with flaps. such a large pressure differential going into the prop arc will vibrate the motor and the flap, even though the flap is in front. pressure waves propagate in front of and behind a prop, just like they do underneath and on top of a wing.
If you want better STOL performance, use a blown wing, with especially blown the portion of the wing with the flaps.
the pusher config makes a shorter coupled wing and horizontal stab. this means that more down force must be achieved by the horizontal stab to create pitch stability, decreasing the coefficient of lift of the wing, and therefore negatively affecting the L/D, as well as overall lift.
V-Tail will change the angle of the vertical stabs relative to each other with AOA changes. when pitched up, they angle towards each other at the LE. and via versa. this is not a problem at high AOA, but in cruise flight, plane may wander in yaw, and that will prob. be coupled to roll too. together, will tend to diverge in spiral trajectory mode.
There is a measurable benefit from switching from a tractor to a pusher, all else being same, but all else is usually not the same.
would be interesting to see a direct comparison.
dirty air almost inevitably ends up being injected into the prop arc in pushers, with few exceptions. props work best when injecting clean air. but if their prop wash blows onto a draggy fuselage, then any gains are lost. I would like to see a clean air flow pusher, perhaps a twin counter rotating pusher similar to the MD-91X Propfan. the Celera 500 is another good example of a pusher with single engine however, and I'm partial to twins for a variety of reasons. also distributed propulsion.
anyway, great to see you experimenting, just like the name of your airline. :). nice that it offers an opportunity for discussion.
have you tried a twin boom design? back in 06, I was getting over 2 hrs on a twin boom easy star camera plane using a 4200 Lipo on 3S just because it could use a much larger prop disk area than the original easy star.
3 bladed props also help with vibration, but overall usually bad for efficiency unless you have a lot of power to apply to a small disk area, and want to go really fast. neither seem to be the case for you here with these designs.
    cheers!

oh wow the legend has uploaded!
you taught me how to build my very first airplane years ago.
    thanks EA

It looks like it'd be a great trainer keeping the prop off the ground. But is it easy to build?

I will def be building one of these. Can’t wait for the build video. I like how it slides in the turns. Is that because of the autopilot or will it do that with a regular gyro as well?

You must be wasting so much power with the motor being so far out of the line of flight.
