Try my recipe instead of aloo parantha.. .... Saute chopped onions, green chillies, ginger together till onion turns slightly red... Then add the mashed potatoes and saute little more till the moisture in the potatoes dries....( This will ensure that your parantha is not soggy from inside after you have made it)....... Then add salt, dhania powder, little garam masala, jeera powder, chaat masala, and chopped coriander..... Mix well, remove from fire, cool and then stuff it for making your parantha.
