GOBI PARATHA
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2
Ingredients
For Dough
2 cups Whole wheat flour, गेहूं का आटा
Salt to taste, नमक स्वादअनुसार
2 tsp Ghee, घी
¼ tsp Carom seeds, अजवाइन
Water as required, पानी
1 tsp Oil (after kneading) तेल
For Cauliflower Stuffing
1 medium Cauliflower, grated, फूलगोभी
Salt to taste, नमक स्वादअनुसार
4 no. Green chillies (less spicy & chopped) हरी मिर्च
1 inch Ginger (peeled & finely chopped) अदरक
1 ½ tbsp Coriander leaves, finely chopped, धनिया पत्ता
1 ½ tsp Prepared Masala, तैयार किया हुआ मसाला
For Masala
2 tsp Cumin seeds, जीरा
1 tsp Coriander seeds, धनिया के बीज
1 tsp Black peppercorns, काली मिर्च के दाने
For Butter Mixture
½ inch Ginger (peeled & roughly sliced) अदरक
3 no. Green chillies, हरी मिर्च
⅓ cup fresh Coriander leaves, धनिया पत्ता
Salt to taste, नमक स्वादअनुसार
½ cup Butter, cubed, मक्खन
Other Ingredients
1-2 tbsp Ghee ( for roasting) घी
For Assembling
Curd, beaten, दही
Pickle, अचार
Onion, प्याज
Green chilli, हरी मिर्च
Process
For Dough
In a bowl, add whole wheat flour, salt to taste, ghee, carom seeds, water as required and knead it into a semi soft dough.
Apply oil and keep it aside for resting.
For Cauliflower Stuffing
In a bowl, add grated cauliflower, salt to taste and leave it for 5-10 minutes.
Squeeze out the excess water from the cauliflower and transfer it to a bowl.
In the same bowl, add green chillies, ginger, coriander leaves, prepared masala and mix it well.
Keep it aside for further use.
For Masala
In a pan, add cumin seeds, coriander seeds, black peppercorns and dry roast it on medium flame for 2-4 minutes.
Transfer it to a mortar pestle and grind it coarsely.
For Gobi Paratha
Divide the dough in equal portions and roll it out with the help of a rolling pin.
Add the prepared stuffing in the center, close it with another roti and seal the edges.
In a tawa, heat ghee, place the prepared paratha and roast it on both sides until golden in color.
Transfer it to a serving dish and apply some prepared butter.
Serve hot with prepared butter mixture, curd, pickle, onion and green chili.
For Butter Mixture
In a mortar pestle, add ginger, green chillies, fresh coriander leaves, salt to taste and grind it coarsely.
In a bowl, add butter, add the prepared mixture and mix it well.
Keep it aside for further use.

Sirji aapki jai ho. We have been living in the US for 23 years. It is impossible to get decent gobhi paratha here. I made several attempts over the years to make it. All missions ended in disaster. I found your video the day it was published but couldn't get a chance to make it. Finally I took 3 days off during the thanksgiving week and made this today. With butter chutney of course. Man prasanna ho gya. I am very grateful to you. Thank you.

We are maharashtrian & we make tikhat mith chi chapati means mirch powder ,salt , chopped coriander leafs ,oil on dove then role it , putting skillet fry with oil or ghee , this spicy chapati serve with mango or lemon pickles , very yummy .

Chandigarh to Manali road trip ki yaad agayi, one road side dabba tha with those khatlas, and that dabba wala was only serving parathas, he saw us duble patale, bhenji ye lo garam garam mooli and this cauliflower prantha, i asked him less oil he said itne se kya hota hai and he added dollap of makhan on paratha on tawa and roasted paratha, then while serving gave another dollap of makhan on paratha, itne se kya hota hai Ello Ghar de dahi ki lassi that glass I saw in was about to faint😂 itna saara khana padega 😅 but hats off to his generosity. In That fresh air and mustard ki khethi. And garam garam prantha wow wish could go there again 10-15 yrs back.😊

Wow, the makhan tip is mouthwatering 😋. Chef please start reviewing channels that make the worst made food, recently I saw a channel saying she is making restaurant style sambhar recipe and used mustard oil, adrak lasun paste, garam masala and vegetables like padwal. It will be interesting to know your views as a MasterChef! I feel it’s okay to tweak recipes that suit your palette for personal consumption but if you have a channel & you are teaching others there should be some authenticity associated with it! I love watching Chef James Makinson reviewing your recipes and how much he appreciates the history and information you give us about a recipe’s creation along with the fact that you keep it simple and authentic. When you tweak as per our Indian taste buds you mention why it has been altered which shows the genuineness of a true chef. Also a very happy teachers day to you 🙏🏻
