Can you guys do “How to make the best mashed potatoes?” I think there are so many ways you can go about this! Ex. Which potato is best to use, which method is best to make the mashed potato, milk vs cream. There are just so many ways mashed potatoes can be made and it would be awesome to see how you guys bust that myth!
I use the potatoes we have, and the dairy we have (milk or half & half and butter)) This is a great idea!
I use potatoes, sour cream, whole milk, butter, and then some salt and pepper. Tastes real good imo
Think this would be a good one! I like to add a little spoonfull of dijon mustard to mine just to give it a tiiiiny bit of a kick. I'm talking a heaped teaspoon in a 6 portion pot of mash

Nicole asking for a snack while they're literally baking snacks is 100% my four-year-old every single day 😂 I love it! Also, I do the same thing as Trevor: boxed cake mix and frosting from scratch. Why are we like that??

I have to admit, I watch the Mythical Kitchen video BEFORE GMM when Josh, Nicole, Trevor and Vi are all in it. I love all the Kitchen videos but it’s pretty magical when these four are together.

I never thought that I would be doing something that Josh also does but I’ve been doing the cupcake sandwich for years and it is UNDOUBTEDLY the best way to eat a cupcake! 10/10, full endorsement.

Why were they so adamant about wet into dry? I thought you were supposed to do the opposite SPECIFICALLY to avoid the dry parts that get stuck to the sides of the bowl. 😂
@@deprofundis3293 I've only ever heard wet-into-dry in the entirety of my time watching cooking shows for the past 20+ years.
I won't be surprised if they one day eventually install some equipments and pulleys or related contraptions just to allow Vi, Nicole and Trevor to make their entrance more and more dramatic
How many of Trevor's personalities have we seen so far? It's like he turns into a chaotic Gen Z boi with Josh, with Nicole he almost sounds like a food network host where he can just go ham on his baking expertise, with V he's just plain goofy and talkative it's so interesting! Then he turns into that youngest child of the fam that everyone nags but also spoils when they're all together.

You’ve NEVER HEARD OF THAT TECHNIQUE?! I literally thought that my mom invented that technique bc she was he only person I thought that did that! 😂
It's an important technique if you have a large mustache or a beard. I do it so I DON'T get all messy.
I've actually been doing that for a while, it may look mess, but it actually keeps everything together better and you also get more even bites!

It’s absolutely superior! Old fashioned way you can get frosting all over your face. The sandwich way keeps it mostly clean (besides the crumbs).

I'm pretty sure sifting flour comes from the days when flour weevils were much more common. Gross, but true. No one wants bugs in their brownies.

Sifting flour came from the day AP flour wasn't a thing and you added your own rising agents, it's the best way to make sure they're mixed in evenly, also I'm old enough to remember when flour had lumps.
if you rewatch that segment, Josh has clumps left over in his sifter
@@wwaxwork Flour can still have lumps. And AP flour is all purpose flour - it's middle of the road for protein content and works well for most uses, hence the name. It doesn't have rising agents. You're thinking of self-rising/raising flour which has baking powder mixed in, and sometimes salt depending on where in the world you are.

I was told you should sift flour because it settles in the bag, and you have to loosen it to get an accurate measurement (it will have more flour per cup because it's compacted.)
That's why using weight instead of volume as your unit of measurement is more accurate. Less quick though.
@@Boogieforme Honestly I find it quicker 😅 I can just tare the scale and dump stuff into the same bowl etc. Meanwhile with cups I have to find the right measuring cup/spoon etc.

Love you all, the content is always super entertaining. However, I feel like there were a lot of variables in the episode. Mixing was a huge factor for the sifting, and if both were mixed in kitchen aids for the same amount of time, it would have been more accurate. And when it comes to the melted butter versus room temperature, I feel like Nicole's preference for a denser chocolate cake makes this a "Busting Chocolate Cupake Myths", because then the melted versus room temp could drastically change if they decided to do any other flavor of cake.

Great episode. On melted vs room temp butter, Nicole is absolutely right, any technique that can make my chocolate cake more brownie-like is a total win. However, if these were yellow or white cupcakes, the opposite would be true--you'd want to make them as light and fluffy as possible, and so room temp butter is the right call for those!
I'm kind of amazed the mythical lawyers haven't added a disclaimer regarding any non-cooking-related advice from Josh.

I would argue that the reason the sifted cupcake was smoother was because josh was the one who mixed it. Vi didn't really mix the batter as hard as josh did so it might be a contributing factor to why it looked lumpy

I would still stick with the creaming of the butter/sugar. I want my cake to be a cake and not a quasi brownie.

Some more cupcake myths to munch:
Over mixing the batter by hand?
Blooming the cocoa
Coffee as the main liquid
Wet into dry or dry into wet
I think it's because these are a little clearer. You can over mix anything with flour, that's how gluten works. Blooming cocoa definitely changes the flavor; I've made baked goods with and without doing it, and realized something was missing when I had forgotten to do it. You can try just blooming cocoa for something you basically eat directly at home. Add a bit of coffee powder to this experiment; it definitely deepens the flavor profile as long as you add enough, but slightly more than enough starts to make it taste a bit like coffee, so be careful. The wet into dry/dry into wet is a good one to test though.

And letting the batter sit for X period of time.
There are long form brownie recipes out there, allowing the batter to sit for 2-3 days. I'd be interested to go in deep on brownies!
These are good suggestions. This video, for me, doesn't hit as hard as the others because Mayo was strange to compare against acidic liquids, and the control was a weird hybrid method of creaming butter and sugar, but not for long enough, and then totally deflating it by adding all the liquid and turning it into a muffin method. Your suggestions make more sense to me.
I'd also like to see a true comparison of technique with the same recipe: creaming, reverse creaming, muffin method.
@@bodyofhope Adam Ragusea has a mini series about brownie "skin" and, based on that, letting the batter sit helps the sugar dissolve which causes the shiny crust on top.

I've always ripped the bottom off a cupcake and made a sandwich with it; less messy and a more even frosting to cake bite.
What bugs me about this comment is that it’s exactly right about the whole more even bite, even though my logical brain knows the amount of both doesn’t actually change, but it works anyway 😂
@@averyeml It really does; and yes, it makes no logical sense, since the actual cake/frosting ratio doesn't change, but I guess it's why oreos aren't two layers of cream with a cookie in the middle. 😊

I feel like melted butter may only work for chocolate or other denser/deeper tasting cupcakes! If we're talking vanilla, room temp butter may probably be the way to go!
This is my favorite series on this channel, makes me legit laugh every time. The chemistry of sweet chill mom Nicole, out of control dad Josh, too cool to care Vi, and sweet little baby Trevor: TOO good. Can't wait for next season!

Okay, Trevor's crab stance got me thinking...
Trevor's spirit animal is the crab. He knows himself well. Like the noble crab, Trevor can be both silly and serious, as needed.
Josh is an alpaca. He is never serious; he knows only the goofs. His love of garbage foods might lead you to think he's a raccoon, but this is just one of his alpaca-like tricks!
Nicole has powerful "mom" and "aunt" energy, making her a bear. Or a snorlax, if you're talkin' pokemon.
Vi is the gecko. She can do a mlem.

I just use a pudding pack for all of my cakes, cup sized or not. Holds moisture really well, which is very important for chocolate cakes.

In most of these myths, the mixing technique of the different individuals is the biggest variable. You could clearly see Josh's was more mixed than V's, this happens on pretty much every episode, the biggest differences have nothing to do with the changes in the recipe, it is due to differences in the heating between pans, stirring and mixing techniques of the cooks.
I feel you. The scientist in me hurts sometimes but it’s so dang entertaining. Makes me want to try these myself with more controls.

I'm totally on board with Josh's cupcake eating technique. You don't have to worry about getting a face full of frosting! It's the easiest and cleanest way to eat a cupcake. I do that every time.

I kinda did have a little beef with this myth busting episode (as someone who bakes a bit, and baking is pretty technical), bits of inconsistencies in technique btwn the teams (or maybe they were edited out and it was consistent, idk 🤷🏻♀️)

While I have nothing against using sour cream/mayo for moistness, I have a chocolate cake/cupcakes recipe of my moms ive been using since I started making chocolate cake. I love it so much I just tend not to deviate from it lol
My mom's go-to is to scrape out the last bits of all the dairy products (and mayo) that need using up. Yoghurt, milk, kefir, buttermilk, cream. Each cake is a surprise 😁

As someone that makes cupcakes for fun because I love baking, I also have always pulled the bottom off and put it on the frosting. It’s a cupcake sandwich with an even cake to frosting ratio with every bite!
I was surprised there was an obvious visible difference to changing each of these things. I wonder if you did the mayo with unsifted flour or unmelted butter if those counteract the denseness though.
Not really as they're doing 2 different things in the process. Sifting actually aerates the flour, adding more air and making it fluffier. The same for unmelted butter, which creates steam and builds more air in the crumb. Meanwhile Mayo is eggs and oil, so when adding it, you're adding more eggs and butter/oil. This adds more moisture to the mixture and makes it more rich and moist (I prefer sour cream or buttermilk for more tang, but mayo, yogurt, buttermilk, and sour cream add more moisture)
Oh and NEVER overmix your batter! You want as much air in that batter as possible! (Aside from giant air bubbles)

the one thin i got from this episode was that josh created the cinnamon challenge years earlier, and over years it changed from cocoa to cinnamon

I am so sick of the obsesion with Dutch processed coco. It tastes like oreos... such a flat and boring chocolate flavour, it's litterally a process designed to take the personality out of chocolate (mainly the metalic flavours of lower quality chocolate) and it's being hailed as this great thing. sure, it's good to be able to use worse chocolate without it's harsher qualities but god damn, a good coco powder absolutely kicks dutch processed coco powder's tush

I agree that Dutch processed isn't good as a full replacement for normal cocoa. I think most people like it because it's different and reminds them of oreos. However, I do tend to use a blend of good quality cocoa and Dutch processed; I like the flavor of the Dutch processed as a complimentary note to other cocoa.

i know Trevor usually cooks and bakes awesome but is that really creaming the sugar and butter?! it was lumpy not smooth! if he had smashed it with a rubber spatula or used beaters instead of leaving so much clumps i think it would be better...

Love these myth munchers segments. They are not only educational but fun to watch.
I think a great idea for a cooking show would be to re-create the foods that the Try Guys make in Without a Recipe. So you have a base recipe but still use the elements that make their creations special.
