I have a small celebration coming up with about 10 friends. I will be making these as appetizers for sure. Thanks for telling me I was using too much charcoal, that has solved my temperature problems on my Weber. Can't wait to get some of the Smoke That.

We cook a lot of food for our watch parties and our tailgates for the home games. I'm definitely adding this one to my favorites. I feel you can prep these the day before then the day of sear each side.
Another endless amount of variations with those pinwheels. From breakfast to tailgating sporting events, especially football get together's. Those are going to be a big hit. Gosh, just so many ways to use this idea. Of course I am now realizing why you live in the great state of Tennessee. A very long time ago you subconsciously envisioned all this without realizing it. Football, being outside, grills, griddles. It all make sense now. It's all about the cheese. Yes, there are many variations which I have learned from watching and many stand alone good ones and combinations too. But it comes down to that one and only one you can incorporate with the others. Yep that Orange one. Where have I seen that color before watching football. Iv'e seen it somewhere. Now my state Purple and Gold, Black and Gold. Those colors more reserved for a dessert type dish. But Orange, well the opportunities are endless. Orange is so popular you could even use it in a sentence. lets say like someone knocking at your door and you say Who's there? and they say Orange. You say Orange Who? and they say Orange you glad ya'll don't have to play those Tigers this year.
Hey, what are your thoughts on a stainless steel griddle? Been thinking about a griddle for a couple months now. Considering stainless because, I assume, it’s much easier to maintain than rolled steal or ceramic.
Went back & looked these up since I plan to do some soon. But, I'm thinking about using smoked lamb and tzaziki sauce with the onion & tomato & garlic & cucuber in larger chunks, but regular feta size crumbles. They'll need something else too, so any suggestions are very appreciated. Olive tapenade maybe? But definitely something else. Thanks.

When rolling them up how far in advance of putting them on the griddle could you get away with? Looks great, I like the idea of the smoked chicken.
I would not think to long...the tortilla will eventually start absorbing the moisture...

Maybe vise versa...olive tapenade inside and greek salsa on top...The olive mix would make it easier to roll
