Ace, I eat octopus alot. I always aggressively rub them coarse sea-salt for a minute and rinse immediately. This removes all the slime. Freezing them for at least a day will tenderize them. Actually octopus contract and toughen as soon as they hit boiling water. The longer you boil them, the more tender they become. You will see this when making my Ramen soup with Octopus chunks. For my soup, I only use Samyang Buldak (mean Hot Chicken in Korean) noodles, but in a pinch or for those wimps that can't handle any sicy foods, you can use the regular Maruchan Ramen shrimp or chicken flavor at Walmart. My favorite Samyang Buldak noodles are Carbo (pink pack), Cheesy (yellow pack), Jjajang (green pack), 1x Fire Noodles (black pack) and 2x Fire Noodle (red pack). We go through over 200 pack per year. I buy through Amazon but be careful some sellers are literally thieves and price gouge. Try to buy from sellers like "Z Force Trading" or those selling bulk 5-packs for less than $10 or $2 per pack. For my family size soup, I boil 2 packs of the Samyang noodles in 4.5 cups of water for 10min. Do not drain!! I then add the included sauce packets, (1) tablespoon of onion powder, (1)tablespoon of garlic powder, (2)cans Campbell's Cream of Chicken soup, (1)can of pre-cooked dice potatoes, (2)Tablespoons of butter (optional) and (1/2)teaspoon of White Pepper (optional). Simmer for 5min. If too thick add 1/2cup of hot water. Last add 1lb/450g of raw octopus chunks and simmer for an additional 10min and you're done!! This recipe works with ANY seafood, especially Shrimp or Baby Whole Clams, but only simmer for 5min!! Sometimes I add a can of mushrooms and sometimes I add a can of pre-cooked dice carrots. Just remember the Samyang BULDAK noodle are spicy, but not draining the water and the soup recipe as a whole, dilutes down the spicyness a lot!!
Quick advice from a french diver : freeze it for several hours, boil it (1h per kg) then put in on the grill until the extremities become crispy. Add some garlic and olive oil and enjoy it !

I wanted to give you a little advice on how to properly cook octopus!!1 italians have been eating octopus for thousands of years and the recipes are just amazing!! you should put a bown of water to boil up, put some salt and olive oil in the water, once the water boils, pu the octopus in it at low heat for 40 minutes. when its done, just slice it, put it with some boiled potatoes, add salt, pepper, olives and olive oil!!
Hey acer, a really good tip to make the octopus less chewy!!! First dispatch the octopus and find a nice flat rock, then start bashing and rubbing it against the rock and white foam will come out of the octopus. This method removes the chewyness of the skin and if you do it for a while it will start removing the skin and this also tendencies the octopus, do this for about 10 mins minimum and your octopus won't be chewy at all Hope this helps😊
Hey Ace, long time watcher, quick tip with the grill, in India, we cut an onion in half (I’m sure you’ll always have one on hand) stick a fork in the end of the uncut side, dip the cut side in a bit of oil and use that as a brush on the gill, that covers the grill nicely with oil and flavours a tiny bit. Would help when there’s no brush on hand
Another awesome video Ace as always. This may sound weird, try and put the octopus in jam and a little bit of soy sauce and two table spoon of olive oil, just marinade the octopus for two hours should do the trick but overnight is the best. Don't mind the jam that might get into the meat of the octopus because you won't taste it, just clean it and start cooking or just cook it straight from the marinade. It will be the most tender octopus you would ever eat mate.

Hey man great video as always but I'm a cook and I was gonna give u a couple tips for tender non rubbery octopus so my favorite way takea a little time but so tender - 1).start by marinating in. Whole milk the night before 2). Then blanch in boiling water for no more than 30 seconds 3). And last but not least bake the octopus in a dry covered pan for (brace yourself) for 4 to 5 hours at only 200° Fahrenheit or until tender then cool slowly in there own juices Give it a shot it's super easy if not a little time consuming

And maybe it’s just me but when I cook big octopus like that I boil my water with whatever seasoning you want then add some lime juice or wine for acid then put in the octopus on really low heat for about an hour and a half to 2 hours making sure it never boils and just stays right below a simmer. Then I take it out and shock it in ice water for abut a minute to cool off the skin.And I get perfect octopus every time. And by not having it too hot it keeps the skin on.

In Greece, they air dry them a bit, but you can dry them in the fridge, and when you grill them, they get crispy. Use a lot of olive oil!

Pro tip I’ve learned with octopus or squids, scrape the tentacles before cooking. It removes its suction cups.
