    SUPER-easy thing to make that one might not expect is Korean savory pancakes. Use a pre-packaged cole slaw mix, 2 big handfuls is plenty & some chopped green onions mixed into a savory pancake mix(just a regular mix with some salt, pepper & garlic powder added) with a teaspoon each of soy sauce & sesame oil. You can stir in an egg or two or a can of chicken breast to add in some protein. Just pour em out onto a hot pan or griddle, just like regular pancakes. Easy & delicious! I live in a converted minivan full-time & I have no problem whipping these up!

      @@amanda.outside another cool thing is that you can change the ingredients around as you like too. Don't like chicken? Fry up some ground pork or beef. Adding the soy sauce & sesame oil to the frying meat REALLY bumps of the flavor profile, giving it that deep 'umame' taste. You could even forego the pancake mix & mix all the ingredients with extra eggs & make Korean omelets.
      I don't have refrigeration #vanlife, but if you do(for storage) you can REALLY take it to the next level and add in some kimchi, a Korean spicy pickled cabbage. Just WATCH when you open it - I suggest over the sink - it is an *actively fermenting* food. But oh my lord, there is literally NOTHING like it(it contains LOTS of garlic, Korean chili flake "gochugaru" & fish sauce, among other things. There are videos here on YT showing how to make your own!). You might store the jar inside a plastic ziplock bag; it is quite strong. But pleeeaaase dont let that deter you from trying it! My best friend growing up was from Korea & his parents made kimchi the old school way like back home - in 5-gallon glass jars buried in the backyard! Sooooooo good! You can usually find a commercial kimchi in Walmart in the cold produce aisle.

    I love shopping at Trader Joe’s before I go camping! A go to meal is their box of mushroom risotto with sliced up chicken sausage. So easy!!

    I love these ideas! It seems like we often stay out hiking and exploring until way late and find ourselves making a late dinner at trail's end before heading back to camp. These will work perfectly for when we are tired, hungry, and in a hurry and don't want to make a huge mess. Thanks for sharing!

    I like to use the little baby bottles of wine instead of some or all of the water in the boxed rice/risotto dishes. I rarely drink it but I love the flavor it gives food (and the alcohol cooks out when simmered). Yum!

    These are great! I can't wait to try the couscous. A twist on the taco is fajitas. I prep the veggies and slice some chicken at home then cook in the cast iron with a fajita seasoning packet at camp. One pot and so delicious. Thanks for your hard work on these videos and sharing your experiences.

    ... Awesome ideas Amanda .. You always have interesting videos with need to know subjects and your meals and meal preps are the BEST out there .... A one pot camp meal is always a PLUS , usually , as said , running out of time from the days activity or just not in the mood for a drawn out camp meal ,, heck ,, I don't cook big meals at home either .... A little pre-prep is a time saver ,, along with occasional time spent with a dehydrator and vacuum sealer .... Stay Safe and enjoy your time in the outdoors !! ...

    For a real simple meal (good for lunch) instead of box mac and cheese I like the Annie's (or Cracker Barrel or other brand) of shells and cheese that comes with a cheese sauce packet. That way I don't need milk or butter when making it and I can keep a couple in my food box as extra/just in case meals.

    I am such a nature lover but for some reason didn't start camping til last year. Even tho I love to cook I waa apprehensive to cook while camping cause camping was a learning curve itself lol but......I found your videos, binge watched ALOT and first big meal was packaged rice, inidian curry chickpeas and Naan bread! It was fantastic and sooooo easy to do camping. Love love love your videos!!!!!! Thank You!!

    I use those 12oz cans of Roast Beef that I buy at Walmart 3 ways. The Ramen I told you about. I also make 2 beef tacos by sautéing some sliced onions with the drained roast and season with some black pepper, cayenne, and paprika. The add some soy sauce and top with pepper jack cheese. My other use for canned roast is to sauté the meat with a little chopped onions, seasonings, a little soy sauce, then add 1 can condensed Cream of Chicken soup (plus 1/3 can water). It is a creamy thick soup with meat.

    for me any syle of asian hotpot is the best thing ever while camping. There exists a ton of borth mixes you just add to hot water at any asian grocery store, then just throw that in a pot and have an asortment of thinly slices veggies and meat to cook quickly up in the broth as you eat (thinly slices pork or beef is a classic, thinly sliced mushrooms are very good, nappa cabbage etc). Perfect meal to share and the broth will be perfect out in cold weather just like a soup would

    Never thought of it this way before but I do One Bag meals most of the time. I could do the same with your one pot meals and my dehydrator. Making them one bag meals. I already have one to perk up the Ramen. I add 3 tablespoons of Harmony House vegetable soup mix and 2 tablespoons of the dehydrated Cabbage plus a shot of hot sauce. ( small bottle in my pack )
    Backpacking you want light weight food that's easy to pack but tastes good. Using freeze dried vegetables and meats I make the meals at home and pack them in Zip Lock Freezer bags.
    In simple terms......Freezer bag cooking is nothing more then heating some water to near the boiling point , adding it to the bag and waiting the required amount of time for everything to reconstitute.

    yes, ravioli is yumm, another option is tortellini, the dry kind with some italian sausage and garden pasta sauce.. Tacos are their own food group LOL..... the risotto would be awesome with morels and boletes ... always yummy stuff in your camp, thanks for sharing....

      Yum! You can make a quick soup with tortellini & a few veggies. Easy for cook & kids love it. I cut up a cooked whole chicken, freeze in packets & use in various meals. Love your channel Amanda

    Instead of the Mac and cheese that you need to drain, Pasta Roni makes a shells and cheddar flavor that you don’t drain. I always bring a few boxes when we camp.

    This video was perfect timing. Great ideas. We like chili, can you recommend a good one? We are flying to a destination, rent a car and go to camp site. We can't prepare at home and take it with us. Any suggestions?

      Chili would be a great idea for a meal. Unfortunately I can't think of any store bought chilies that I've tried recently. Sorry I couldn't be more help with that. I hope you have a great trip!

      Get the boxed 2 Alarm chili kit, then get the canned tomatoes and buy some ground beef and onions, cook at the campsite.I assume you will have a stove & pan to cook?

    Here is a better Ramen recipe. Break up Beef Ramen into small pieces. Stir fry some chopped onions and one 12oz can of Roast Beef (drained). Add some black pepper, paprika, cayenne pepper, and 1 TBSP of flour to meat while heating up. When meat is ready, add some Soy Sauce. Then add 1 1/2 cups of water, broken up Ramen pieces and 1/2 seasoning packet. Bring to a boil than let it sit on low for 5 minutes. The flour would make the remaining water into a thick gravy.

    Jambalaya requires celery. Celery, green bell pepper, and diced onion are called the Holy Trinity in Louisiana cooking. Pretty much everything starts with that - red beans and rice, gumbo, etouffe, jambalaya. You leave out the trinity, it's wrong.
