Your drawing is exquisite. You have a real sensitivity & patience. Pencil, or crayon needs patience & respect, plus a good sharpener at hand and kind paper, (and an eraser can be used sparingly as a tool to create highlights). I also like the way you've used toned paper/board as white can be too stark. 5:33 was when it actually looked like hair Instantly when the highlight was added in places that were purely black, it suddenly came to life and looked real as opposed to every second before that it looked like an attempt to be hair. Once that singly strand of white was made though it looked real
The trick is distinguishing fine hatching, crosshatching, with layers of shading from the point of light in your art. Hair is never used with fine lines if your going for the realistic style. It takes finesse when your tattooing.

He goes it again and darkens ever apart of the hair that isn't already black and continues to add more hair into the light portions. When he does he goes dark some places and light others. He also uses smudging to put a very light amount of grey in the light portions. He also at this point includes the finer details of the hair like where it falls on the ears or the small spikes out bits. Don't get to detail focused to early or you will overdevelop some parts while messing up others. Focus on the first five steps and then you can go nuts with the details.
He is a very good artist but I wonder if you spend such time and detail on just the hair, how long would you take to complete a full portrait? You have skill and patience bro!

Therefore focusing on hands would not help. You would have to capture his process and develope your own imagination with a lots of practice.
Break down what he did in the video first what he did was making the shape of the hair and then he started from shading the darkest colour to to the lightest then once he achieves the overall shape n tonal value and shading he can go to details by making the the shading more darker and adding few hair strands n highlighting few areas by erasing with a thin eraser

I always see these how to draws but there difficult because of superspeed time laps video and no explanation of how to or the direction of how the pencil is supposed to mark against the paper there's no point of a how to title but rather this is what my drawing looks like as tilte instead even if viewers were to slow down the video there self there needs to be a little words of step by step guide even if it has to be subtitled for other languages ... however besides the minor details on a positive side this is a very good artist
