Some of you got on me on my last cooking video for not listing the ingredients, so I made sure to do so this time! I don’t measure, so I can’t give you that, but I hope you got some meal ideas and enjoyed the video.
You are such a wonderful chef. I love watching you cook. Please stay safe and aware of your surroundings. Your videos are so calming, and you have the most comforting voice. Good video.
This is awesome I’m currently 24 in the military showing people how to budget I get out at the end of this year and this is my goal! I hope to get a very similar setup! Hope anyone who sees this follows my journey wether u want to save money or see my future van 😁

Monique, Good morning and welcome back. The meals you prepared look absolutely amazing and delicious. You are very skilled and it amazes me how you’re able to do so much while in the comfort of your van 🚐. As always, I love watching your videos and look forward to tagging along on your next journey. Be safe out there and enjoy the rest of your day. 🖤
Good morning 😊. It's always a pleasure to chat with you. I'm glad you enjoyed the video. I hope you have a wonderful day and thank you for the continued support.
Hi My New Best Friend! I am in love with everyone of your videos thus far. Everything that ha been previously mentioned by others I concur! I am amazed @ the meals that you prepare. Please, I want to be the first to know when your cookbook will be released...because I know in my spirit that there is one soon to be released! May God continue to bless you, keep you safe and blow your channel up to the stratosphere! Much Love! Prayers!
These recipes look delicious! And as already stated by @theevolvingmindset333 your filming and editing is awesome! Looking forward to more healthy cooking videos from you!
Hi Monique, It's so good to see you, darling. You are my Sunday routine😊. Another mouthwatering video. The jackfruit rice seems very interesting. Here in Jamaica, we eat the jackfruit ripe straight from the tree. The bell peppers over the open flames seem very interesting also. I love jackfruit and I love bell peppers in almost all my meals 😊. I must give it a try. For some reason, I don't know why this video made me so emotional, especially as I watched the first 5 minutes😢. I guess it took me back to a very dear childhood memory of Sunday cooking with my grandparents who are no longer with us.. bittersweet😢😪 Great video, sweetie. The chef in you certainly showed up today!👌😊. Thank you for these recipes. Keep safe and warm, until next week. Blessings and love abound you🙏🤍
Hi ❤️. I love the sweet, ripe, jackfruit as well. I’ve never had any fruit straight from the tree. I can’t wait to change that when I own some land and start planting my food forest 😊. Blessings to you and your loved ones, AliSophia 💞💞.
@simmpleenough I can't wait for you to have your food forest and experience having your fruits straight from the tree😋👌🙌 there's just something more exciting to the palate about it😊

I didn’t think I would get to see nice cooking video on your channel. Hi I’m a new subscriber. I tried Buckwheat for the 1st time after seeing it on sale and grabbing it. Wow I really like this stuff. I would love to see a recipe that you would make with this Buckwheat using your imagination. I looked up the health benefits of this Buckwheat and was astounded. Thank you for sharing I may try one of your dishes.
I really enjoyed the cooking video. Thank you for the ingredients. I appreciate it when you share your dishes and methods of cooking. We are benefitting from your past. Yaaay. Got a can of jackfruit from TJs, I had it for awhile now. Because of you, I will get right on it.😊 Thanks again.
Yea, the jackfruit tasted a little flat to me and the acidity from the vinegar added some "umph" to it. The lime wasn't really needed, I just love the flavor of lime on my tacos and rice bowls. I'm glad you enjoyed the video 😊.
Thank you for sharing the ingredients. The foods look delicious and healthy. I don't measure my food either. I use my best judgment, and it always turns out accurate.

@@simmpleenough HI Monique I can't wait to buy your cookbook. I'm very interested in eating more vegetarian foods that are healthier like you do. Hi! So all these years, I've kept a wet little towel in a bowl nearby to keep from crying when chopping onions. (The 'crymakers' are drawn to the moisture in the towel. Don't know why🤷♀️) How are you just slicing away without so much as a sniffle?🥹 Oh... and there's a line of us outside waiting with our forks & bowls... KIDDING!🤣
Love the way that sorbet looks....healthy eating is a hard and draining journey for me. Living life simpler may just be the key to my success in this area. The hustle and bustle of life from 430am-730pm....doesn't help at all. Great video...I am inspired to try new foods especially more veggies. My body is screaming for a change.
I feel you. Just take baby steps & do what you can 😊 . It took me a couple of years to transition into a healthier lifestyle. I took my time and didn't force anything. For me, easing into healthier habits makes it easier to maintain them long-term. If I jump head first into something new, I might become overwhelmed and want to quit. You'll get to where you want to be. I'm happy my video inspired you.
You're DEFINITELY not alone! It is indeed a process to recondition the mind and body. But it can be done. I've known my husband since we were 14. He was always 'big boned'... He's an IT field tech so fast food ruled. Until @ 37 a bout of diverticulitis hospitalized him. He decided instead of the 9 meds they prescribed, that he would replace the junk w raw veggies, fresh fruits, lean proteins, & a cooler in the trunk of water & green tea w fruits and that wonderful Insta pot & air fryer! We made big enough batches of whatever to put into grabbable containers & pop it into lunchbags. I have a Hotlogic for my office & there's one for the car. He's a 5 a.m. to 5 p.m. grinder, too. It took two years, but from 420 to a healthy 190/200 AND from 6'2" to 6'4"! Two inches taller because his spine was no longer compressed! Diabetes GONE. Asthma GONE. And all those 4XXXL GONE! Now, it's trails to waterfalls in autumn, the coastal beaches in the summer, museums, all types of walking fun! @His mum's passing two of his uncles didn't even recognize him! I'm looking forward to trying out the jackfruit in the video. I see it in the farmers market, but never really knew what to do with it or what it was supposed to look like. ~Sending good vibes your way!🎉
