For Smash Bros, hit up or down and roll it to a side input without releasing pressure. If tap jump is off, it's easier to roll it from up to a side for walking.

I would say this dpad is responsive for normal dashes. Instant airdashes like in dragonball fighterz that require a diagonal tap (as opposed to a circular motion like a fireball) are a bit tougher and take some getting used to.
It has all the same buttons and the dpads are mapped to function as analogs so I'm sure you can, BUT I think it would be difficult to precisely aim since you are stuck with only 8 directions for both movement and the camera. I havent tried this controller with Fortnite specifically, but I had trouble playing Doom with it just against the AI. Fortnite often requires precision scoping when people are ducking, in the air, on uneven terrain, and under cover. So I think you could be at a bit of a disadvantage. Also, while the dpads do click in to simulate L3/R3 or clicking in a thumbstick as a button, it's not the easiest thing to do. You have to press all four directions down to activate it...you cant just click in the middle. I got used to it in Doom but it takes some time. I hope this helps!

Works surprisingly well on minecraft. I got this controller because every thing else got drift.
