That's a real smart move he noticed a very specific need in RURAL China where there are no big restaurants for weddings etc.
He made a MOVING restaurant because in those areas the need is only occasional because of the low population density.

This truck owner not only does catering but brings the whole venue right up to the door. Usually in rural areas the locals did everything themselves so the scale is so much simpler, even if the wedding is done between two nearby villages. I heard how they do it is only to hold one banquet at the groom's after they successfully brought the bride over, but if it's the groom who marry in/recruited by the bride, then it's at the bride's. So to hire this truck it might probably take the newlyweds and their families' whole funds, if not the village(s). But you don't know if the rural folks are richer than city folks or not just by judging where they live.
