I'm American and don't know much about Sophie but everything I've seen and heard about her, she's a class-act! In this video she was casually standing back and conversing with others but when the Queen started to struggle a bit with the cake, her eyes and attention laser focused on the queen and you could see her defuse the situation and help without making a scene almost like how moms do... they are lucky to have here as a minor royal none-the-less.
The Queen always seemed to take these minor hiccups in her stride and just enjoy the mild comedy of it all. I always admired her duty and stoicism, but it was just in the last few years that I started to appreciate what a sweet temperament she had. A really nice dynamic there with her daughter and her daughter in law. They'll all miss her terribly, I'm sure. God Speed, Ma'am.
I love watching Queen Elizabeth I think she is so fascinating she has the softest voice and is such a beautiful lady always professional, it's always so exciting to see what outfit she is wearing with what hat, she loves her country and her people

She wasn't having troubles cutting it at all, she was having issues getting the knife out, she didn't wish to hold the cake to pull then knife out. Which is why you usually place a slice under the cake where it is to be cut, so you can hold back the cake whilst pulling out the knife. Hence why cake slice handles are never flat, but instead have a bulbous area closest to the the slice
