You’re the best macaron baker 👩🍳! I stick on Swiss Macaron method for 2 years! But recently I have problem ,my Macs after baking still wet in the middle,the shell in middle is soft ,look moist inside!sometime happens sometime not ,so you think cause the humidity? Thank you in advance 🙏
If you use Sugar Bean's methods, humidity is no longer a factor. I think it's because you don't bake them long enough. You can't follow the times given by these professionals with high-end commercial ovens. I bake mine 3 minutes longer than does Sugar Bean.
