1. What is oven shower..??
- The oven-shower is to wait 2-3 minutes without removing the tray in the oven after baking. (with open the oven door)
2. How to dry in the oven..?? (high temp.)
- 1st preheating - turn off - put the tray in to the oven (at this time the temperature drops to 90-100℃) - 2nd preheating - start to dry, until the temperature reaches 120℃ again (with open the oven door) - close the door and bake - oven shower
Look at the subtitles in the videos, there is detailed temperature.
3. What is the baking mat's name..??
- This is called a teflon sheet.
4. How long do you whisk meringue or do macaronage with mixer..??
- It's not important how long I did.
Because we have different machines and environment..!
You should check the cocsistency of meringue or mixture frequently.
5. What kind of colors do you use?
- Chefmaster liquid colors

- My ovens are UNOX 135 and convection type.

- I made all templetes myself and I am not

10. Do you left or bake immediately..?
- As I already explained, I do not leave it because I am drying in the oven at high temperatures for 2-3min.
It is a very useful and convenient tip to reduce the time required.
Also you can get shiny and smooth shells.
11. What kind of eggs do you use? fresh eggs or aged eggs?
- I usually use fresh eggs. But' It doesn't matter what kind of eggs you use.
12. Why do you cook in a double boiler?
This is called 'Swiss mering method'. You can
make more stable and strong meringue.

thank you so much for cracking one open. I've watched a few of these and I keep thinking at the end... I wonder how they look like inside! espeically since some people end up with a pocket of air inside its nice to see how dense yours turn out. look like they end up perfect! beautiful work, love watching this in the background of just hanging out with my kids. I find it very relaxing and peaceful.

Beautiful! SugarBean where did you get those little white cups with the handle? They would be so handy to have for coloring small batches of icing and macarons as you do! Looks easier to hold onto then a small bowl.

2-3분 120도 정도로 오븐건조완료되면, 따로 꺼내지않고 바로 문닫고 140도로 올려서 15분 구우시는거 맞죠?? 120에서 140 올라갈때까지 오븐안에 그대로 냅두는거 맞죠? 영상에서 그렇게 하신것같은데 오븐건조를 해본적이없어서 질문합니다ㅠㅠ!! 영상 항상 잘보고있어요~!!

You can whisk by hand with a whisker. Or get a hand mixer. I see some for only $20usd
why have I never thought to use a tablespoon measure to separate eggs?
저 고온열풍건조하는데 오븐이 장갑을 끼워도 안되는 오븐은 그냥 열어두고 건조하는게 좋을까요? 가게나우 오븐인데 옆으로 여는거라 장갑을 끼워도 작동이 안돼요ㅠㅠ

Can u tell me how long I have to whisk the egg white ?
No way to tell. Depends on how you do it and what kind of a mixer you use. I use a hand mixer and it takes me about 4 minutes, give or take. She doesn't tell you how to do it by time but by the relative speed and what to look for in the meringue before changing speeds.

I tried your recipe! Its taste great, not too sweet but my problem is its didn’t have feet ;-; i try both oven drying and resting for hours at room temperature, its always came out flat!
maybe its the temperature you bake it at? like it might be too low
I bake at 110-120c, i had tried using higher temperatures and it cracked

슈가빈님 방법으로 열풍건조 아주 잘 하고 있는데요 우녹스 오븐 예열 시간이 몇분정도 되나요? 스메그를 쓰고 예열기능이 따로 없어서 15분정도로 예열시간을 잡고 하고 있는데 조금 과건조 되는 느낌이 들어서요~
몇도까지 예열하실건지, 그 온도에 도달하면 예열은 끝인거고 시간은 상관없지 않나요 😅😅 어쨌든 15분은 너무 긴 거 같은데욤~~

Why do you change recipes. Some of the other videos your amounts of almond flour, powdered sugar etc is different?
Most are for the Swiss method, some recent ones are for the French method. Ratios might change for those 2 methods. In addition, different recipes are for making different amounts of macaron shells. The amounts are not important. What's important are the ratios. Can you point to 2 recipes where the ratios are different?
