CREAMED KALE CASSEROLE! Healthy Recipe| Dairy Free | WFPB

  • RECIPE:
    3 bunches of kale or other blend of greens (use 2 lbs if using frozen chopped kale)
    1 onion diced
    8 oz mushrooms diced small
    3 cloves garlic
    2 tsp Mrs dash table blend seasoning
    1 tbsp low sodium soy sauce
    pinch of black pepper
    For the cream sauce:
    1 can white kidney beans drained/ rinsed
    3/4 cup raw cashews
    1 cup unsweetened plain non dairy milk
    1 clove garlic
    2 tbsp nutritional yeast
    1 scant tbsp dijon mustard
    optional 1 tbsp lemon juice (forgot to add in video)
    For the topping:
    1/4 cup breadcrumbs (I toasted 2 slices of Ezekiel bread and blended it up)
    1 tsp onion salt from Trader Joe's (or dried onion flakes)
    OR you could use shredded cheese on top- just cover it before you bake it.
    STEPS:
    -Wash leafy greens well. Remove stems and roughly chop greens. Add greens to steamer pot and steam for 7-8 minutes. Remove from heat and let cool. Once its cooled down enough, place greens on cutting board and chop up really small. Set aside.
    -Heat up a large pot on medium heat. Saute 1 diced onion, mushrooms and garlic in either olive oil or water saute in 2 tbsp broth. Add in the Mrs. Dash and soy sauce and pepper. Cook til the mushrooms are soft and most of the water has cooked off.
    -Blend up the cream sauce ingrdients in a high powered blender. Add the cream sauce to the sautéed onion/mushroom pot along with the chopped kale and stir to combine everything together. Season to taste with more salt or Mrs Dash.
    -Transfer mixture to casserole dish around 8x8 size. Top with breadcrumbs and dried onion flakes (or Trader Joe's onion salt) or shredded non dairy cheese (cover if you are using cheese) Bake at 375 for 20 minutes. Serve warm right away.
    To make Ezekiel bread crumbs-
    Bake a few slices of Ezekiel bread in oven at 300 degrees for about 10 minutes til hard and dry. Then blend in food processor til crumbly. Add any seasonings you’d life such as Italian seasoning, garlic powder and/ or nutritionally yeast.
    Other method-
    Toast 2-3 pieces of Ezekiel bread in the toaster til golden and set on wire rack to dry out for about 30 minutes til hard. Pulse in food processor til crumbly. Add any seasonings

    A little sprinkle of paprika and maybe some parsley for some pops of color! I know brown doesn’t look appetizing, but it really does sound delicious!

    This actually looks really appealing to me. I might sprinkle fried onions or crispy jalapenos on top instead of crumbs. I have been going through so many of your videos and have tried a few of your recipes as well. Really enjoying the content. Watching some of your older stuff too - the difference in prices is so huge!

    Oh great idea throw some water chestnuts in there and call it spinach dip L O L. Cannot wait to try this. Could probably put artichokes in there and color artichoke dip too

    Looks so delicious!! Such a great way to eat greens! I would put a sprinkle of paprika on top of the bread crumbs for a little colour!😉

    I love the ability to pull the stems out of all the greens and therefore I don't like using any of the frozen or bagged kale. I really dislike those stems. The only time I use them is for my smoothies then they get pulverized in the blender. This casserole looks so good I may have to give it a try. Thanks for all the ideas you share .

    Yum, look so good thanks. I wonder if you poured the breadcrumbs on in a grid fashion like a noughts and crosses board (tic-tac-toe) if that would look good so you can see the creamy greens peeking through the crumbs.

    Love the casserole. Always look forward to your recipes. I am making Thanksgiving stuffing to stuff mushrooms , Golden Gravy, sweet potato casserole, turnip, green beans, baby red potatoes with garlic butter and homemade cranberry sauce with maple syrup. Hope we see your Thanksgiving dinner.

    Looks delicious! Have you ever mixed the greens ie kale collards etc? I just noticed you are mixing the greens …sorry. Maybe finely chop up fresh kale to scatter on top?

    Ummm, Quick question Chanty. What do you do with the stems once you removed them from the kale? 🥬

      You can juice them if you want! I usually compost them
