ZUCCHINI ROLLATINI High Protein Low Carb Plant Based Recipe + Chocolate Zucchini Muffins

- Today I'm picking zucchinis from my garden to make a special garden to table dinner recipe and I have a special sous chef helper today! We are making dairy free zucchini rollatini which is a delicious high protein low carb vegan recipe. With the leftover zucchinis from my garden I also made double chocolate healthy zucchini muffins! If your garden is overflowing with zucchinis right now these are some yummy zucchini recipe ideas!

Zucchini rollatini
2-3 zucchinis thin sliced into strips using a veggie peeler- only use the outer part, not the seedy part -15 zucchini slices total
Tofu ricotta
- 1 package firm tofu, drained
- 1/4 cup nutritional yeast
- Juice of 1 lemon plus the zest
- 2 cloves minced garlic
- Handful of fresh basil
- 1/4 tsp salt and fresh pepper
about 3/4 cup Marinara sauce
Vegan cheese shreds
Slice zucchini into thin strips using a vegetable peeler. Set aside. Blend up tofu ricotta recipe in a food processor.
Spread ricotta mixture onto the zucchini strips. Sprinkle with dairy free cheese. Roll up from the bottom to the top into pin wheels. Spread out about 1/2 cup marinara on the bottom of a 7x13 “ baking dish. Lay the zucchini roll ups on top of the marinara. Top with a dollop of more marinara. Bake at 375 for 25 minutes uncovered. Sprinkle cheese on at the end, cover and bake for another 5 minutes.

'Don't be weird on camera' 🤣 I like it when Colly Wolly is weird on camera. 😄Great video thanks, drowning in courgettes at the moment, just went to six of the neighbours to give them some too so this video is perfectly timed. One of the very easy zucchini recipes I've been making is ratatouille, fried onion and garlic cloves, add sliced zucchini and a blob of tomato puree sprinkle of paprika, and cook until soft, then add a few diced tomatoes cook a little longer. Blend a few cashews with a little lemon juice, garlic, salt pepper and chilli for a creamy sauce, add to ratatouille and serve with pasta.

Honestly this is the best recipe ever. I've been making this since your video probably 5 times because we love it so much. Getting ready to make it again but instead of rolling the zucchini I'm just going to lay it out like lasagna noodles. Your recipe for the ricotta tofu is the best I've tasted as well. I made the lentil bolognese. But I also threw in broken up lasagna noodles. And I made your ricotta cheese and threw that in after it finished cooking along with spinach. It was amazing . Tasted just like lasagna. Loved it!

I don’t have one of those wide veggie peelers so I cut the zucchini into thin slices with a knife and then layered with the tofu ricotta like a lasagna. It was delish and super easy!

I liked how you featured a main ingredient and made it different ways. Very useful for veggie gardeners when you have a lot of a particular veg in season. Or even shoppers if there is a good price on a particular veg
I have zucchini coming out my eyeballs right now! So making these this week.
I've made this twice now and the first time my veggie peeler didn't cut right so the rolls were uneven and it still tasted spectacular. The second time I just thin sliced the zucchini length wise and made it into a lasagna. It was soooo good!!
This recipe is right on time zucchinis everywhere right now. We dehydrated a bunch for fall soup recipes and I'm totally making the dinner dish for sure

I rarely use fresh garlic because it is so potent. When I was young, my brother used to tell me that I smelled like garlic for days after, despite great attention to hygiene, and I was traumatized. When your sous chef called you out for your breath, I was so triggered! 😂😂😂
Do you have any suggestions for using carob powder instead of cocoa powder? I’m thinking that it would be sweeter naturally and have no caffeine but I don’t know if it would affect the texture in any way. Loved this video. Thanks!
I haven’t really cooked with carob that much so I’m not sure!

You didn’t find them to be watery at all? A lot of times I sprinkle with salt and let them sit for a few min then pay down to draw the water out *the roll ups
Surprisingly no it wasn’t watery at all! Maybe cause it was so thin using the veggie peeler? Or cause it was cooked uncovered
You should cut the leaves of tomatoes now, so they can gain more light and "focus" on growing fruits instead of feeding the leaves :)
