    EGGPLANT PANS IN RODLES

    --2 EGGPLANTS
    --VINEGAR
    --FLOUR, n.o.s.
    --PAPRICA SWEETS
    --PEPPER
    --COLD WATER
    --CORN OIL FOR FRYING
    -- SALT IN SERVING
    PRESCRIPTION EXECUTION
    -- Cut the eggplant slices and put them in water with vinegar to de-bitter and not to absorb too much oil when frying.
    We wash them and drain them well.
    Add all-purpose flour, sweet paprika and pepper and mix them very well so that the flour sticks well on them. We don't add salt, only at the end after frying them.
    Our oil must be very hot. Put cold water in a bowl and take the rings, dip them in the water and directly into the hot oil. This way they will become very crispy.
    Place them on absorbent paper. And at this point before serving we will pour our salt.
    They are ready crispy on the outside, soft on the inside and very tasty without having absorbed too much oil. Try this recipe and you will be surprised. Good luck to you. :-)
