Holy crap, this was the best sponge I have ever tasted! After many previous attempts at making sponges which didn't work out, I decided I would just do a trial and error with basic sponges to find one that works So tonight I tried this as well as the vanilla sponge from Nora Cooks, and I was flabbergasted at how well they both turned out. This one is unbelievably light (almost a little too light, but that could be my fault, as when trying to substitute lemon juice for vinegar, I doubled the amount) and it's taking all of my self control to not just eat it as is In future for my bakes, would you suggest using the same amount of lemon juice as vinegar if I don't have any of the latter? I doubled as I read that lemon juice is less acidic than white vinegar Thank you for sharing such an amazing recipe

Cookie butter is the best! If you’re in the US, Canada or Europe you should be able to get it. I’d say the best replacement would be a chocolate ganache in terms of texture. Any nut butter (almond, peanut, etc.) will be too sticky on the mouth.
Hmmm, I'm not so sure it would work. You might need a little less milk. For my carrot cake since I blend the carrots with the batter, it works like that (1.5 cups instead of 2) but if you're going to have shredded pieces of carrot in it, the batter might be a little too light for it. Try using coconut milk instead and coat the carrot pieces in flour to make sure they don't sink to the bottom. Let me know how it turns out!

Won't the crushed cookies in the middle just go soggy?
If you eat it within the first 24 hours you should still get a crunch. After that the cookies will soften but it won’t feel mushy

Hello i follwed your recipe but the batter turned really dry
I replaced white sugar though with brown sugar :(
Tried it but with no success :( followed it exactly stick was clean but the inside was more like an apple pie.
