You would need to make it a feature not structure and maker sure they repeat enough times to generate. Features underground or below sea level are uncommon so you need to increase the amount of chances by a lot to get anything to really generate. This is just how the game works and has been a bug in the game for a long time.
Is it possible that you could start from the beginning and show how to do it then showing how it generates once its all done? I think that would help a lot more then showing the aftermath of the project since it still refuses to work

Structures before where actually using features though named structures, which is why the locate command did not work on structures back then, features still have support for disabling rotation can the anti-floating script I made a while back can still be run through features too.

I don't have a video though you can change attributes through commands for most entities, some are not supported for other entities but there is a wiki page below if you want to check how to change attributes. minecraft.wiki/w/Attribute minecraft.wiki/w/Commands/attribute The command is the bottom link which you can change entity attributes. Some also work on players but you will need to check which ones will work for what entity on the first link. I don't often record third-party plugins or mods as things can often break when the devs decide to change things or stop developing lines in the case of the Fabric generator. But the links above give some control over the base game attributes, you can run the command via the procedure and it should allow you to change entities or even players based on the script.
how would you make a structure that spawns halfway under the ground tho? Like having an entrance to a dungeon, where there entrance is above ground and the rest is underground
You would need to edit the terrain adaption to none this will impact the surface structure generation but it will allow you to branch downwards using a shaft and then out from the bottom of that. Not setting the terrain adaption to one can generate odd terrain on the surface so its always best to follow the steps I provided in the latest video.

How do I make an axe (that breaks wood, disable shields and strips logs) but that can also slash like a sword?
