I'd probably mix sugar and cream, whip it, add melted chocolate bars and freeze it to form a creamy icecream. Then ill take a Graham cracker abd put a marshmallow in it and it goes into the microwave for a few seconds till the marshmallow melts ( or take melted marshmallow and put some on one of the crackers). Finally I'll put the icecream in the middle of those two crackers. I've never made it but this is what i thought :)

You could make normal s’mores and with the cream and sugar make it into foam, and add some melted chocolate, mix it with the foam/whipped cream and used its as a dipping sauce for the s'mores
