An American Biscuit is kind of like a cross between a Scone, and a croissant texture wise, but is more fluffy, and very buttery. The Sausage Gravy (or Country Gravy) is made by cooking what we call Breakfast Sausage which is a loose almost paste of ground pork with spices. You cook that, and use the fat that is left in the pan to cook the flour. Once the flour is cooked (only takes a couple of minutes, and you have to stir it constantly) you add in Milk, or Heavy Cream, Salt & Pepper along with some of the crumbled up Sausage. You can add other Herbs & Spices if you want.
Gumbo starts with the Rue. Rue is where you slowly cook flour until it is a deep brown (don't burn the flour though!). The you add the water, meat (sausage of various types, shrimp, ham, crawfish, or whatever you have on hand), Bell Pepper, Garlic, Onion, Celery, and tons of spices. Gumbo is a dish you can make with a lot of different meats and veggies. As long as you get the Rue, and Spices right it is open to whatever you have on hand within reason.
BTW Chorizo is pronounced more like 'Chur E so' in Mexico, and the U.S..
Fun Fact: The word Chipotle = Smoked Jalapenos

    • @AliKaiProject
      @AliKaiProject  5 місяців тому +5

That clears things up! Might have to look into Gumbo recipes and try to make it over here, it looks delicious!

    • @phobiaone306
      @phobiaone306 5 місяців тому +4

@@AliKaiProject If you are going to make Gumbo the main keys are getting the Rue correct along with the right Spices. After that it is very simple. To make a good Rue you will need to cook it a long time on a low heat, and you have to keep stirring it so you don't burn it. Burnt flour will ruin the whole pot of Gumbo!
I eat Gumbo at least twice a month, but I eat a lot of Cajun/Creole food as well. I live just outside of Houston, and being so close to Louisiana we have the benefit of a lot of great Cajun/Creole food here. I like spicy food, so Cajun/Creole food along with Tex-Mex, and Latin American cuisines make up a lot of my favorites. Of course Texas BBQ is my #1 favorite.

Jolly has a knack for finding the best places to eat in the US. I use their videos to point visitors in the right direction for places to eat. Biscuits are not really like scones, they are light and fluffy, a bit salty and very buttery. Southerners like to cover them with cream gravy that has ground sausage mixed in. The Spanish once controlled Louisiana, which is where Jambalaya originated from in concept, substituting ingredients for local ingredients like our German variant of heavily smoked andouille, chicken/pork, and spices, also without the crunchy toasted rice found in Paella. There is a tomato and seafood based Jambalaya as well, most notable in and around New Orleans, but never found in Acadian. Also, the architecture in the French Quarter is also a Spanish contribution, as odd as that sounds.

Dressing is another name for stuffing, like stuffing made on thanksgiving. Candied yams are sweet potatoes that are parboiled to make them soft then covered with white and brown sugar, cinnamon, a little bit of vanilla and syrup or molasses. It’s then baked so the sugar gets “candied” like caramel.

They won't usually tell you this, but Southern soul food has its history in slavery. Slaves were rarely fed enough, so they hunted local animals and picked local produce. Often these animals were not inherently delicious (like opossum or raccoon), or they had to eat it when it wasn't particularly fresh (like when they found it already dead), so heavy spices helped, and Soul Food was born. Of course, restaurants now use quality ingredients and the recipes have been perfected through many generations, so it's some of the best food in America. 😋❤️🤠

I am from California and have traveled to New Orleans before twice already. American biscuits are savory and soft inside, buttery too sometimes and they are served with sausage gravy. You two need to see the rest of those JOLLY videos to see the rest of their visit to New Orleans, Louisiana, I have had scones and American biscuits do not come close to scones. Sometimes our biscuits can be enjoyed with butter and jam, or jelly or fruit preserves. As Josh has mentioned the bar has been set high for both Josh and Ollie at this point when it comes to flavorful food with some spice to it, they loved that southern fried chicken when they were in the state of Georgia as well as the biscuits and gravy there too. In New Orleans Josh and Ollie went to another restaurant (different day) called Willa Jean and they both realized they cannot handle their liquor in the morning when it comes to brunch, because Bloody Mary beverages may be a bit spicy and perhaps too tomatoey for Josh and perhaps he's never tried vodka before, it's just a guess, but they did enjoy their meals there, and at some point, they enjoyed biscuits and gravy again! Hopefully their videos inspire you two do try some American soul food from our southern states especially from Louisiana! I enjoyed your video reaction! Peace. ☮

If you want to try and make gumbo so you can get a taste of Louisiana. This is the exact recipe for the gumbo they ate in the video..
    Creole Filé Gumbo:
    1¼ pounds seasoning ham
    1¼ pounds smoked sausage
    1½ pounds chicken pieces
    ½ pound hot sausage
    1½ pounds peeled shrimp
    6 to 8 gumbo crabs
    1 dozen oysters
    2 cups chopped onion
    ¼ cup chopped garlic
    3 green onions, chopped
    ½ green bell pepper, chopped
    2 teaspoons thyme leaves
    5 bay leaves
    ⅔ cup vegetable oil
    4 to 5 tablespoons flour
    10 cups water
    Filé powder
    Salt and pepper
    Hot cooked rice, for serving
    Method of Preparation:
Cube ham and slice sausages. Heat oil in an eight to ten-quart pot. Add ham to brown.
Add onions and cook until tender. Add chicken and sausages and brown. Add shrimp and other seasonings and cook five minutes.
Sprinkle flour over meats and seasonings and stir well.
Add water and bring to a simmer. Add salt and pepper to taste.
Add gumbo crabs and cook on medium to low fire about 45 minutes. Add oysters and cook five minutes. Turn off heat.
Add filé powder (to taste) and stir into gumbo. Serve over cooked rice. Serves 10 to 12.
Note: Seasoning ham is simply leftover baked ham, ham steaks, etc. chopped into 1/4 inch pieces. If your crowd doesn't care for heat, substitute your favorite breakfast sausage links for hot sausage; just make sure it isn't a variety that includes syrup or other sweeteners. Gumbo crabs are readily found in the freezer section of Louisiana supermarkets; they're the leftover crab after the jumbo lump meat has been removed from the body of the crab. If you do not have access to gumbo crabs, substitute 1 quart of boxed seafood stock for 1 quart of the water.

Spicy in Louisiana cooking is very seasoned but it is not intended to be burn your face off hot. You want to taste everything in the dish. Typical Cajun/Creole seasoning is a combination of salt, cayenne pepper, black pepper, granulated onion, and granulated garlic as a baseline, each blend will have their own twist to the basic combination of which, everyone has their favorite. Hot sauce is used as a marinade component and to give extra heat for those who want it, but it adds quite a bit to a plate of red beans.

I know it's common, in Europe, to call anything on a bun a 'burger' BUT. the breading (bun) does NOT make something a 'burger'... "Burger" is short for HAMBURGER, thus ONLY ground beef shaped into a patty and cooked, then placed on bread (of any type as sliced sandwich bread can also be used and it doesn't make it a 'sandwich'...) is the ONLY thing that can be called a 'burger'. EVERYTHING else is a 'sandwich' by definition.

    Biscuits, and gravy.....
-- the gravy is a flour-based gravy that spiced with black pepper & ground sausage meat. Which that type of gravy is called "sausage gravy".
-- without the sausage, it's just "white gravy"
--Biscuits are lighter & fluffier than a scone.
I haven't eaten biscuits & gravy, but I've had each of the ingredients.

The term “Soul Food” was coined in the ‘60s to describe foods created by the Southern slaves before and after Emancipation. They were extremely poor and had to make do with whatever food items they could find, and to make it as palatable as possible.

The only thing biscuits and scones have in common is flour and water, that's it, biscuits are totally different. Soul Food has it's origins in African American Southern cuisine. Those favorite childhood foods that mom made (if she could cook) is called comfort food.

I feel like New Orleans gets overlooked by a lot of International travellers that come to The US. It's a truly unique American city that has American food that most people outside of the US rarely know about. And for the liquids of gumbo, most people would soak the liquid into a piece of cornbread and eat it that way. Cornbread is extremely dry and porous which makes it like a sponge for liquids. We do the same for other vegetables like greens, peas and greens.

Hi. Imagine French Canadians living in the Newfoundland area , now owned bhy England, 'eminent domained", and forcibly shipped to Southwest Louisiana. All you have are your spices. What would you eat?
That is how some Louisiana foods got started.

Dressing is different from stuffing. Dressing is made from cornbread adding ingredients as chicken stock, onions etc stuffing is made from croutons. Candied yams are made from Sweet potatoes instead of Yams( Yams originate in Africa/Asia so the slaves substituted Sweet potatoes because yams are rare here and we just kept calling it Yams) Catfish is very big in Southern USA. I grew up eating fried Catfish and cheesy grits, it's nothing to see a Friday night Catfish fry you buy a filet on a piece of white bread with hot sauce, mustard 😊

The pork chop special you couldn't understand is what she is calling the "7th Ward" Pork Chop - I assume meaning the recipe originated (according to her) in the 7th ward of New Orleans - New Orleans is split into numbered wards for voting purposes, so it's a New Orleans thing to define where you come from by the ward number - i.e. my family originates from the lower 9th ward - also there are neighborhoods like Treme, Bywater, and others that people identify their heritage by - if you Google the 7th ward (or Treme, etc.) you can get information on the area they encompass

It’s funny but Comfort Food and Soul Food are a bit different. Comfort food is what anyone might find as comforting such as chicken noodle soup, macaroni and cheese, or biscuits and gravy.
Soul food in the US is food that originates in black communities. Soul food can be comfort food.
Here’s a good video for biscuits and gravy: ua-cam.com/video/_GN1lh9q5WE/v-deo.htmlsi=_KEu8vKwfWSnatVu
Jambalaya is a variation of paella because it originates from people brought over as slaves from Africa.

I hear the biscuits and scones comparison a lot, but we have scones here too and they're very different. Scones are dense and sweet. Biscuits are much more similar to a denser but fluffy, sometimes crumbly sometimes flaky, bread roll. Imagine a muffin that wasn't sugary or sweet at all.

I recommend New Orleans to everyone I meet who has never been, domestically or abroad. Everyone always talks about NYC, LA, and Miami for their US trip. Those places are great in their own way, but not as unique as New Orleans, if you ask me. Other southern US locations I’d recommend: Charleston, Savanah, and Asheville.
The only downside for someone from the UK is the time of year y’all take holiday. Any of those locations, save maybe Asheville, are not going to be the most comfortable in the dead of summer for anyone who isn’t used to that sort of heat and humidity.

Gumbo is NOT a soup, but I understand why some people think it is. Many people make gumbo that is a little thicker. It is kind of a family thing, eveyone has a slightly different spin on it, but if it is done correctly, you know it is gumbo.

Southwestern and Louisiana cuisine is pretty spicy. In the rest of the south, some food is spicy and some is not. All of it, however, is very strongly flavored. At home, even canned vegetables that were being warmed up on the stove got garlic, onion, salt, pepper, and a generous spoonful of bacon grease added. My southern food tradition is southern Appalachian, so it is far less spicy than you would find in New Orleans. The kinds of things you would find in our traditional foods are: biscuits and gravy, chicken and dumplings, fried chicken, cornbread, fried apples, fried green tomatoes, soup beans, and lots of fresh vegetables straight out of the garden.

    Southern Sweet Tea Recipe:
Fill a Qt pitcher 1/2 full of Ice. Store in freezer or fridge.
In a 1qt pan fill 3/4 with water.
Add 1-Cup.. yes CUPS of Sugar and 3 Tea Bags(Lipton or American Classic are best)
    IMPORTANT:
Then turn on the Heat and bring to a boil.
(This makes the Sugar on the bottom begin to Carmelize). When it comes to a boil, turn off heat, THEN stir and allow to cool for an hour.
Pour into pitcher with ice and stir.
In the Summer add a few slices of lemon.
That's my Great, Great, Great, Great Geandmothers Recipe.
