  • Taro is a great ingredient for making mooncake filling. Use the part of taro with pink-purple flecks as it will yield taro paste with nicer colour.

    Amazing recipe! Tried it today for Mooncakes and it turned out great. Do you mind me asking, where you got your steaming machine? I’ve been trying to find one for months!

    Can it be use for steamed bun? Can I add coloring to the paste? To make it look prettier 😄

      Yes, no need to add glutinous rice flour if using it as bun filling, you may add colouring if you prefer.

      Try freezing the paste, return to room temperature before using.

      Not quite understand the question, do you mean can you cook the taro in water? Yes, but the taro might be more watery and it takes slightly longer to cook into paste.

      For taro paste, glutinous rice flour is some time optional depends on your taro. If your taro has a lot of sticky substance, then your may omit glutinous rice flour.

    i try to do it today and it's turn to be so springy now. so only can be moon cake filling? others then that? one more things is if I put in freezer how long can I keep?

      There are many varieties of taro, taro paste made with different type of taro might have different colour. You may omit the glutinous rice flour if the taro you use contains a lot of sticky gluey substance. I haven't kept for too long, 2-3 weeks should be fine I think.

      Omit the glutinous rice flour if the taro you use has a lot of white substances.

    I transfer the paste to a plate after cooking and it kinda spread. Is it normal?

      Then it is not dry enough, if for making mooncake you need to cook it until drier. If used as filling for other like bread or pao, then it is ok.

    650 gram taro got about 1 taro.
    You cook this taro will to sweet or not. i want bake 10 piece shanghai Mooncake. 1 each filling 66 g for 10 piece filling. This taro 650 g is enough for 10 piece. Now i waiting u reply me OK thanks

      This is mooncake filling, not too sweet. This recipe yields about 700 g taro paste, enough for 10 piece.

    How to know if the yam paste is done while stir frying.. I did it for about half an hour for 1kg yam.. but the it feel quite sticky Izit normal

      If you double the recipe, then the cooking time will sure be much longer, you need to cook until it resembles the consistency as shown in the video. Otherwise, it will be too wet for making mooncake.

      Hi, I follow your receipts except that the glutinous rice flour I only add a quarter spoon instead of the usual.. is it normal to turn out chewy or is it I over cook. The yam is the same as u use?

      I have tried making taro paste without adding glutinous rice flour and it turns out fine.
      if the taro you use contains a lot of sticky gluey substance and you add glutinous rice flour, the paste will have chewy texture.

      This paste is not very sweet, you may try reducing 10 g, less sugar will affect the texture, the paste will be drier and you may need to add more oil.

      It’s a similar procedure but you will have to rehydrate the taro powder with water until you get the same consistency as mashed taro. Then everything else is the same.

      Actually taro and yam are different, but sometime taro it is called yam. Taro is "ubi keladi".
