    Great recipe. Can I use corn flour instead of pectin and of so the same amount or less ? Thankyou.

      You can use corn flour instead of pectin, I would go with 4% to maximum 8% of the bananas (depends on the thickness of the jam you are trying to create), if it sets too much, you can always blend it to make it smooth but still maintain some form of body and structure with mouth feel. Make sure you dilute the corn flour with some cold water other it can go lumpy and wont dissolve properly. I hope this helps. Let me know how it turns out.

    Hi avery! Excuse me, I've got a question. Is it possible to make this jam using less sugar? Let's say, 200gr of sugar per kilo of bananas. Aside from conservation, may it have any effect?

      Hi Joan, welcome to the channel. Thank you for the support. You can make this jam with less sugar however you will have to add more pectin because sugar also acts as a thickening agent otherwise all you will get is banana puree. You could use brown sugar as a healthier option or other sugars such as agave syrup or maple syrup but with more liquid, you will need more pectin. If you don't want to use pectin, you could use a 4 to 8% corn flour measurement to overall weight depending on the thickness you are after. If it becomes too lumpy, just blend it after and you will get a smooth jam like texture.

      @@joansebastianmarintorres177 I think it will be highly delicious in Bon Bons as that is a great pair (Chocolate and Banana). You could even add some Rum.

      @@AveryRaassen Oh man, a bit of rum might go just perfect with them. I've never tried it, but I've heard rum is an excellent pair for sweet, bold flavours.

      You can try a 3 to 5 % corn flour to the weight of mix.

      If you do, it can oxidised faster and go brown.

      You could freeze what you don't eat and that can last for a good 6 months in the freezer.

    Where do you get your fresh passion fruit juice?

      I bought the fruit and scooped the pulp and then I strained the juice with a sieve.

      Unless you want a jelly like consistency, I would not use Gelatin. You could use corn starch at about 2 to 4 percent corn starch mix with a little water and then boil with the Banana.

      The shelf life will not last as long. Also, it really depends on your room temperature.
