Mr. Jabbar I am not a Briyani expert or cook like you but to a certain extent I do a good job in the kitchen to earn appreciations. I am a very big fan of yours and follow your videos on a regular basis. After watching this video I wish to express my opinion and I really hope you don't mind.
Your ghee rice recipe especially the ingredients are similar to Briyani rice recipe minus the chicken or meat.
Perhaps you've commercialized it but traditionally Ghee rice is usually left plain coloured; sometimes yellow food colouring is added. The Ingredients are usually :-
onion
Cinnamon stick, Star anise, Cardamom
Raisins
Ginger (shredded) bit of garlic (optional) (finely bkended )
Onions Raisins Ginger roasted in ghee and removed.
Rice to be cooked in ghee that was used to roast all ingredients. Let's say 3 cups of rice; 2 table spoon will do. Add finely blended ginger and bit of blended garlic (optional) roast it first. Then add in cinnamon stick; star anise, cardamom. In Malaysia to add more fragrance some of us add in Pandan leaves and pineapples while roasting all the above (it's a choice; pandan and pineapple to be removed before serving rice)
Add rice into the ghee stir it for a while till it absorbs the ghee; only then add in the water. Let it cook. Once all cooked add packeted mix veges such as carrot corn and green peas. leave the rice to cool down then add the roasted onion raisins n ginger. Mix it well before serving. When the rice is left in its natural colour the roasted ingredients plus the mix veges makes the rice presentation more attractive. Don't have to use a lot of roasted onion like how you use for Briyani just a bit will do. At some homes they'll finish it with only mix veges minus the rest of the garnish items because the HERO of the rice is GHEE which is to be given priority the rest are to add colours only😊
I am well aware that recipes differs from one home to the other. This is how I do it. I hope you're okay with me sharing my take on ghee rice🙏
