I would question the saturated fat issue. Many of those studies don't account for other foods (processed foods, carbs, and sugar) that were also being consumed. I started eating keto in 2020 and switched to carnivore 3 months ago. Since switching to carnivore, I have lowered my blood pressure and resolved insulin resistance as you claim is increased by high saturated fat. I have also almost completely healed my migraine headaches. I obviously had continued inflammation and the previously listed health issues that were NOT resolved by eating a mostly plant-based keto diet. I have family members that have had Alzheimer's and their diets were of a typical Western diet with lots of carbs and processed foods. I think that while people need to pay attention to and resolve the other causes you list in this video, saturated fat is not among them.
There is a lot of conflicting research out there but the studies thus far seem to suggest that animal protein (and of course meat is also high in saturated fats) can adversely affect the microbiome by increasing certain pathogenic bacteria and decreasing beneficial bacteria such as Lactobacillus spp. This has been linked to the pathogenesis of inflammatory bowel disease.
