    I soak the fish in the sauce first before steaming. This is an easy and phenomenal recipe. People that hate fish or "fishy taste" go nuts over this. I did this with Blackfish (Tautog) a few days ago and it came out like butter.

    Just made this and it was so delicious and easy! I didn't have fresh garlic so I used powdered garlic which worked. The depth of flavor would be better with fresh garlic though. Overall, 10/10 would recommend!

    If I want to steam grouper fish ( bigger size), how long should I steam it?

      Between10-15mins. You can have a look after 10mins and if the eye pooped out, it’s done. Do wait for the water to come to a boil before putting the fish in. Also make sure the fish is left in room temperature a while if you just take it out front the fridge. This is to make sure that the fish is not too cold otherwise it won’t cook well. Happy cooking.

    I prepared fish this way and used a simple half lime juice half soy sauce recipe on top. Ate with curry rice and potatoes. Excellent. Will make fish again today along with egg fried rice. Thank you for this cooking method!

    I usually put the soy, sugar & ginger on the fish before steaming because the fish flavour from the fish comes out, thus not requiring additional water. Pouring hot ginger & red chilli oil over is also good!

    What brand soy do you use for this or does that even matter?

      Hi Tony. If I didn’t remember wrongly, we used Lee Kum Kee light soy sauce for this recipe. Yes brand matters because the saltiness level of the soy sauce differ based on their own recipe. You may want to start at a small amount then add more to fit your liking. Hope this helps. Happy cooking!

    Hi, Roland.i made this fish for dinner tonight.
    The sauce was really good except I steam the fish for too long like 12 mins and it became a bit hard.
    Otherwise, my husband think it is perfect !
    Will definitely cook again.
    Btw, can I also try frying the fish instead of steaming ?

      Hi Luvjoesong. Thanks so much for letting us know you and your hubby enjoyed this recipe. Yes you can fry the fish first. You can marinate the fish first with some ginger juice and sprinkle some salt on both sides of the fish. Let it marinate for half an hour. Take the fish out from the fridge at least 15 mins before frying so that the temperature of the fish is not too cold. Last step is to coat the fish with some plain flour - just a thin layer will do. Hope this helps 🙏🙏🙏

      Fish don't need steam too long, otherwise the fish will be hard,. Steam fish need take a 10mint 😊

      Hey Luvsong, if your steaming a fish fillet like that 5 mins is all you need, traditional chinese steamed fish is done on the bone which obviously require more time, a fillet is perfectly flat and will cook evenly and quicker then whole fish. I still prefer whole fish

      Hi Han. We used a gadget from Daiso - Japanese dollar shop. You just need to use that to cut through the spring onion. Very easy. Hope you can find this gadget.

      Thank you so much for subscribing to our channel. Yes you can use dory fish as well although we rarely use dory fish to steam in Singapore because we mostly get them in frozen form. Their flesh absorbs a lot of water so usually it is deep fried. If you can get your dory fish fresh, that would be great. Please clean the fish and rid all the blood from it before cooking otherwise your fish will be fishy. Hope this helps. Happy cooking.

    I clean my fish with salt water solution, it removes the fishiness better and also scums that couldn't be cleaned with regular water. it may be a little bit slimy, but don't worry that sliminess is the scums and the fishiness...pat it dry and you good to go

    Chief so delicious but my granmda don't like much oil can i make it little oil?thnk u shes taiwanese and i love ur ccooking. 😍

      Oil is optional for steamed fish. My mother (bless her Teochew soul) would just steam fish with just sour plums, salted veges, ginger, mushroom and tomatoes. The fish has to be super fresh, and it was heavenly tender and juicy. So simple, so good.
