    I like the newspaper method. But I use an Alton Brown trick and squirt some vegetable or canola oil inside the paper then roll it up. The paper burns for a good minute or two and I've never had a problem. Always have lots of flyers being delivered, so they just go in my wood box by the smoker.

    Apple wood is also one of my favorites... I love the aroma it produces better than any other wood I have used. +1 on the Weber chimney. It's worth the extra few bux. I also love the starter cubes :)

    Excellent job! I also have stopped using newspaper as the ashes tend to blow into the pool. The Weber chimney is certainly the best especially with the handles and the heat deflector.

    What is the best way to vent the WSM for long steady smoking? I keep the bottom vents at half and the top open full, but lately I can't hold temp past 180 degrees. So, I opened all vents to full, same results. Why would it not burn steady at 230?

    Haha. Not a bad thing. I actually just threw a 7 lb brisket on my new WSM. Took your advice and bought the sweet seduction you've used before. Can't wait to pull it off later today. Keep the videos coming!

    I have never used pear or peach. Apple is my overall favorite and I have a fairly decent supply of that but I'm looking for more. I also have a rather large supply of Beech right now that I'm drying out. I have never used it so I'm looking forward to trying it out.

    No do pay the extra 5 bucks. The other one's are not only cheap but much smaller. In fact for a 5-6 hour cook using kingsford charcoal you don't even need to use the minion method. A full pull of charcoal in the weber chimney will last the entire cook. I personally don't like unlit kingsford lighting with my food. I'd use lump or Stubb's all Natural briquettes.

    I’m selling my WSM because it uses so much Charcoal. I just use my kettle with the snake 🐍 method and saves so much money. The kettle can handle a brisket as well just have to know what you are doing

    I was wondering wouldn't it better if he put the lighted coals from the chimney starter underneath the unlighted ones so that it will burn from under rather than from the top.

    Buy cheap, buy multiple times. I had cheap chimneys and they lasted a year at best. Just bought a Weber one and will never buy a cheap one again!

    I have the small WSM and am having trouble how to determine how much charcoal to use for a given cook. Any tips?

      if you have the 14 or 18 WSM fill up the entire basket. In my experience you don't want to just dump the coals over the top like he did. Take out the coals from the center and only use 15-20 coals max in your chimney starter. once you have them hot, dump them in the hollowed out center.

    On the chimney if the holes on the side are the biggest difference, have you ever heard of a drill? save 5 bucks and then drill your own side holes.

    People, DON'T spend the 5 extra bucks. Buy the cheaper chimneys and drill a few extra holes yourself!
