- In this instructional video, I show you how to use the Minion Method to cook on the Weber Smokey Mountain (WSM). I will walk you through setting your vents, how to place your wood chunks, discuss using the water pan, show you some cool add-ons, and explain how-to maintain temps on the Weber Smokey Mountain. This video is not a cooking video, but I do show me cooking some beef ribs.

I watched this when i knew nothing about BBQ -- my WSM isn't even out of the box. After 20 mins of this video, I feel confident and ready to cook.
Congrats on the new WSM and just know it'll take about 5 cooks to get some buildup on the inside to settle down the fluctuating temps. After that handful of cooks, it will remain a pretty constant temp and will produce better BBQ with every cook.
These are the videos I appreciate the most. Regular guys, regular tips. I could care less about professionalism. Straight talk about what you use and how. As for me? I am interested in a new smoker. Videos like yours surely helps in the decision process. Thank you for your time and input Sir.

Dont like what he's doin, move along to the next video. Harry soo has one hundreds of barbecue championships using kingsford. watching these videos at 5am as i smoke a 16lb prime brisket. the wsm is truly a workhorse and a model of consistently. 215-225 for the last 6 hrs without a hick up on a cool California spring night. thanks T-Roy!

Love the vids and it works great for me. Like you say it's all about how your smoker works best. I have a basic smoker with 1 bottom vent. I use this method with the bottom vent started about 1/4" open then shut it completely for 225 degrees. It's all trial and error but your videos are all I've ever watched and everyone I cook for loves the end result. Thanks for the thorough information...you're an inspiration for all first timers out there!

I just wanted to thank you T-Roy. I’m not much of an outdoor cook. I use my weber charcoal grill on occasion, but nothing I cook is anything special.
Anyway, after watching your video several times here I finally got the nerve to use the weber smoky grill (14”) I acquired a couple months ago.
I wasn’t brave enough to try the brisket, so I stuck with two big chickens. I figure if I messed those up, I could just finish them off in the oven or something.
Well, they came out great. Absolutely succulent and delicious. I wish I could post a picture to show you.
I’m going to smoke again next weekend. Probably stick with chickens again as i still get familiar with things, but I feel at least a little proud of what I did… Thanks to you.

Dude, that trick with flipping the chimney upside down to light 15-20 pieces of charcoal is genius. Its always a struggle to get a small amount of charcoal to take off in the chimney. Probably the single most helpful thing I've found on the internet. Thanks T-Roy!! Smoke on brother!

Long time fan T-roy, I enjoy smoking every chance I get but had converted years ago to gas just because of the whole busy life need to save time thing. I enjoy watching and trying to use your advice when grilling in general, just had to modify to my gas setup. Now it's 2020 and I find I have a bit more time available so I picked up a WSM 22" and watched this video! My first cook, smoked about a dozen chicken breast on the lower level. Following your advice made the effort so simple. Easy light up, minion method worked so well. Temp held steady and it was windy. Incredible video, absolute must watch for anyone using a WSM for the first time or if you are having trouble dialing it in. Thank you T-roy

Zardrell Mcknight I'll take a stab at answering this one Zardrell. You have a couple of options, you can stay up all night and add wood every hour or so to keep the temps steady or you can use a metal basket in your firebox and fill it with 2/3 charcoal briquettes and 1/3 wood or lump to get a longer period of cooking between adding fuel.

Hey Mike, you are going to love cooking on that WSM. It produces BBQ that is very close in flavor to the offset smokers, but you don't have to tend to the fire during the entire cook. The WSM is truly a "set it and forget it" smoker. Just know ahead of time that it may take 4-6 cooks before it gets some good carbon build up on the inside, so it may run a little hotter than normal until that 6th cook. And the BBQ tastes better and better with each cook!! Enjoy your retirement my friend!!! Cheers, Troy

T-Roy - Hello from Alaska - I know you posted this years ago, but it is really great. As a new smoker, I come back to it again and again. Has helped me so much using my WSM. We get some cold here but it seems like the wind has the biggest effect on keeping a steady temp. Thank you. I enjoy all your videos and easy style.

Hey, T-Roy! I finally tried to use my WSM that I won in a raffle. Went with an 8-lb pork shoulder. Ran out of heat inside the smoker at the 7 hr, 30 min mark, and just couldn't get it back to temperature, with the pork shoulder at 160 internal. Ran it into the house, threw it into a 325F oven, and it took 4 more hours to get to 190 internal. It turned out great, but I learned a few things along the way, that I should have already known from your videos. Tried using the charcoal snake, and that was huge part of my first problem...gonna try again, doing the pile method you showed here, and see if that gives me longer-lasting heat.

***** I don't use the WSM as much any more since I now have the Yoder offset and Kamado Joe, but the WSM is still a fantastic smoker for those very long cooks. The ribs turned out great!!! Wish you could have been here to share them with me at poolside.

Just bought a WSM. This was a great informative video for someone who has never used this particular smoker.
Lump is the only way to go. The flavor is unrivaled. Once you get the hang of how to properly light it you can control it just as easily as briquettes. Light a small spot in the center and make sure to catch the temperature on the way up. You never want to be trying to cool off your smoker.

I second that. The trick is DEFINITELY catching the temp before it gets out of hand and you have to fight bringing it down.
I sold my 18” WSM a few years ago. Always regretted it. I went to a local hardware store today and they had a floor model in perfect shape with a new cover. They knocked a few bucks off it for me and I took it home. I can’t wait to season it and get to smoking!

At what point do you put the meat in foil?
Hey Dustin, sorry for the late response brother. I've been on vacation. I usually wrap when the meat hits the stall which is around 160F internal.
Thanks! You sold me! I just retired my 20 year old rusted out modified Brinkman vertical smoker. I've been toying with the electric or gas idea, but really like the charcoal better. My frustration with the Brinkman was consistent temp control - took lots of tinkering during an 8-10 hour smoke. Your video convinced me to go with the WSM! Thanks much! I received a WSM 22.5 for Mothers Day and I am so excited. I used to do all of my smoking on a regular Weber grill but couldn't cook a lot at one time. I really like your video because of its simplicity of explanations and how you walked the

I'm watching your video and I cringed the moment you put the lid on the concrete. I don't do that , try to be very careful about it. I usually put mine on a board or the grass something that will not mess the edges of the drum. My theory is that if someone keeps putting the lid or the concrete it may eventually chip away little pieces of steal , that could possibly let heat out. nothing major but just something I don't do. same goes for the bottom half to get to the charcoal.
BTW that's a great idea with the ash grates , I'm going to have to try that.

Just wanted to let you know I got a WSM 22" this week and after giving it a good scorch with a chimney full of coal yesterday to burn off the manufacturing gunk, I'm taking it for its maiden voyage tomorrow morning with 2 x 6 lb pork butts! Not only is this my 1st charcoal smoker (I've had a gasser for about a year), but also my first time doing pork butt. I've been intimidated by longer cooks like pork butt & brisket, but after finding your channel about two weeks ago I feel pretty confident going into tomorrow's cook. I just wanted to thank you for all your hard work in putting together such a great collection of instructional videos for the UA-cam BBQ community. I can tell you love the Lord and love smoking meats--I feel like I've known you forever even though we've never met. How do you shut down the WSM when the meat is finished?

What an incredible video for a first-time smoker user here. I purchased the last smoker on clearance for half price, and, it is currently 1 degree F outside in mid-January for my first smoke of a pork shoulder and ribs. I started with your pencil method, noting I had to open up a tad more since so cold out; yet thus far the smoker is maintaining 225 degrees F with ease. I can't help ponder how long it took the Weber engineers to hone the design to maintain 225 degrees, and yes, I am using the water pan. Thanks again!! You saved me a lot of time on the learning curve!! Peace!!!

Congrats on the new WSM! I think you will love it. Just remember, temps will fluctuate the first handful of cooks until it gets a nice seasoning built up inside, then it will easily hold whatever temp you want to set it at. Cheers!!!!

I appreciate the info . The next time that I'm looking to purchase a smoker that works great, and worth the money, I'll keep this information in mind.
For me, the water pan, would be a must. With what I smoke meats on now , I find it very beneficial to the meat . Sometimes depending on the type of meat that I'm cooking, helps me determine what I pour into the pan . But that's enough said, about what I would do . I do like the idea of not having to constantly babysit, to keep the temperature where it needs to be. I believe that I have also seen some people use this smoker (WSM), in competitions. Which also leads me to believe that they must work pretty good. Man, I kinda been waiting for you to do another grilling /smoking video. Thanks; great video!
Thomas Ballard Hey Thomas, the WSM is used at BBQ comps, especially on those long overnight cooks. I'm with you on putting different liquids into the water pan depending on what you are cooking, but the main thing is to have some sort of liquid in there. I find that it really keeps the meat moist and tenderizes it. I appreciate your support of my channel and glad you enjoyed the video!! Keep the smoke rollin' bro!!!

We were blessed with a used WSM and got to use it due to this awesome video. We smoke a 10 pd pork shoulder for 10 hrs at 225ish/235 degree. Aw man it was the best pull pork I’ve had. Thanks T Roy’s

Congrats on the new WSM!!! You are going to love it. Just remember, it takes 4-6 cooks on it to get that carbon build up on the inside, so it will burn a little hot and be difficult to maintain temps those first handful of cooks. Enjoy it and keep that smoke rollin' brother!! Cheers

Thanks for watching and I know you'll enjoy your WSM. Just remember, it takes around 5 cooks to get some buildup on the inside "seasoning" and it'll run hotter than normal those first few cooks.

Thank you so much for this video. My wife bought me a Weber Smokey Mountain two years ago and after a few failed attempts I gave up on it until today. I could never figure out how to get the temp set just right. A chat page I found on the smoker was no help. Now I've got a nice beef shoulder roast going.
I just want to thank you - your videos have taken my bbq from poor to average to good! Even in the north east of England where a pool really wouldn't work in the garden !
