    Great video and tips. I think I’ll make a mushroom broth soon!
    I’ve been making chick broth with a rotisserie chicken and veggies in the insta pot. Strain out the bones and end up with a delicious broth add rice noodles at then re-add any chunks of chicken from the rotisserie.

    Thank you for your buttermilk recipe. My milk is on it's expiration date but not spoliled. I tried vinegar, and lemon juice, but had to add a little more than a tablespoon of vinegar just as you said, and it is perfect. On this Saturday morning, I am making buttermilk pancakes.     I used this recipe as inspiration to make my own mushroom broth today, and it is delicious! I have used some of the broth & the leftover mushrooms etc. to make a soup, then I think I'm going to make a pearl barley risotto with the rest of the broth. It is also nice to sip on as a drink. Thank you for your lovely and nourishing recipes!

    Could you share with us where you got those lovely baskets? Thanks for Mushroom Broth, my husband is going to love this! Me too!
    I tried the cabbage soup and we were so delighted we had to make ourselves stop eating. We were such pigs! I'm used to fixing big meals, but now it's just the two of us and I can't stop. So I keep making big meals and freeze the leftovers for dinner on a rushed evening. But with this soup I made a double patch. I had 2 small bowls full and was stuffed! My husband is a big eater. He ate all the rest leaving only one bowl full, which we left for my lunch the next day. Now I'm getting ready to try your breads. I hope we like these as much. I'll let you know.

    Thank you Mary, i almost dunked my old wilted mushrooms yesterday while deep cleaning fridge. Wish I knew sooner that we can make broth out of it. We get only button mushrooms where we live, and this recipe requires it 😅 thank God for that.

    Great recipe Mary! I’ll sometimes use a coffee filter in the strainer to remove the “bits and bobs.” Also keeping a tad of fat in it helps you absorb the vitamins and minerals.

    Make bone broth at least weekly and try to consume a large cup each day. Amazing how good it taste with so little effort. Talking about mushrooms made me think about dandelion root powder for some reason. It is supposed to be very healthy and I tried some in my bone broth one day. Was ok, but gave the broth a small off flavor. Have you ever tried this ingredient in your cooking? If so, do you have any suggestions for using it? Thanks. Will be sure to add mushrooms the next time I make another pot of broth.

    A couple of months ago I wanted to can onions and mushrooms together. I cooked the onions and mushrooms before I pressure canned them. I ended up with a bunch of the broth after canning the vegetables, and that I also canned. The onions were strong flavor, so I will use it to make onion soup. I have learned so much from you and have become more willing to experiment with food.

    The channel "Learn Your Land" is mostly about wild foods, the food and medicinal uses, and how to prepare them. It is centered on Pennsylvania (I'm in Missouri but still find it educational), but many grow in other areas. He includes nutrient information on many wild foods, such as dandelions, mushrooms, stinging nettle, and more. White button mushrooms are at the low end of his nutrient scale of mushrooms, but many of the ones on his scale are only found wild. Crimini are higher up the scale. I'm pretty sure he doesn't buy them in stores when they are in season in the wild.

    This looks wonderful. About a year ago I began adding a few crushed dried mushrooms to my chicken/turkey broths. It always adds a wonderful color and rich flavor. I am curious, could this be pressure canned? Would you PC it for 30min - I think that's how long you do chicken broth. I am excited to try this - thanks!

      Thank you so much! I really like to use thick walled glass jars with plastic pop on lids that are described as French Jelly Jars or French Working Glasses. The do a great job. Love, Mary

      I freeze mine in ice cube treys. Once they’re frozen, I throw them in a bag and put them back in the freezer. I can take out only the amount I need.

    I'm really looking forward to making this! I've got a 22 quart electric roaster pan on order and I'm wondering if I can roast the veggies in it rather than the oven and then continue making the broth in that same pan after the veggies are roasted? I've never used one before. Thank you for all of your great videos!

    This looks absolutely wonderful!! I love mushroom soup. I have a question, can you can this broth so that it is shelf stable without ruining the nutritional value?
    I know it would be able to be canned I’m just not sure about the retention of nutrients.

      Hi Eli, that is a good question. I'm not sure. What I do know is that if you pressure can it, the prolonged high temp of the process will break the gelatin if you used chicken feet. Love, Mary

    I remember back in the day when I was a kid there were two types of mushrooms commonly found in the grocery stores, white button and Italian brown, later to be called cremini. Is it okay to use a drizzle of avocado oil in place of the ghee?

    Can this be pressure canned for shelf stable storage? It looks fantastic for winter nights I don't feel like cooking beyond a quick heat up.

      Not sure about pressure canning. The high temp might break the gelatin from the chicken feet. But if you left the chicken feet out - maybe. But I would check first with the National Center for Home Food Preservation: nchfp.uga.edu/ Love, Mary

    Hi Mary! Did you snip the nails on the chicken feet? I've seen it done in recipes where the feet are eaten but didn't know if it was a necessary or esthetic reason. Thanks for sharing this recipe!

      Hi Denise, when I use them in broth making, I don't snip them. Some people do it if the have chicken feet that they suspect may not be clean or simply because they find it unappetizing when - as you said - they are served to eat. Love, Mary

    As a quick fyi....white button mushrooms are just a white morph version of the Agaricus Bisporus discovered and cloned ever since the 1970's.....putting White button, crimini, baby bella and portobella as all the same exact mushroom in different stages off maturity. :)
