    I love the idea of using the seed pods for the pectin. I think I would use my immersion blender rather than leave the pedals whole.

    Nice! And thank you for the thorough comparison in taste and texture. So for those of us who haven't gotten enough harvest to make jam, we can anticipate for next year. And also for mentioning what roselle tastes like straight off the plant. Never thought to try that!
    Two questions: can you keep the roselle calyxes until you collect enough to make jam? What is the best way to store them, and how long did they last? Am really wondering if I can freeze my little harvests until I have enough, and still make jam?
    And how did you remove the fleshy part from the seed pods?
    And an observation for people who want to try growing: if you start the plant early, you may get flowers and a few calyxes in early summer. Then the pests will attack your plants and they may look terrible in the heat of summer. DON'T give up and pull the plants! If you provide a little shade-cloth and prune them back, in the fall, they will bloom like crazy and produce the real harvest. My issue was on 5 plants, I was only getting 5-6 calyxes a few times a week, just never a basketful like other UA-cam videos show. So I made a little tea, and that was that.

      Great comments and questions. I think freezing would work fine for storage. I normally dehydrate mine and they last a long time like that too. I peel them from the seed pod like you would peel an orange. It won’t come off as a whole piece but that doesn’t bother me. I grew 3 plants this year starting in March and got a much bigger harvest than last year. I kept putting them in bigger and bigger pots and they just got huge. They did get a lot of shade during summer and really started growing like crazy in September. I also wait and harvest once every 2 weeks. They will swell up and get a lot bigger if you wait.

    I blend the sorrell aka roselle and my consistency is much thicker.
    I like mine smoother so I blend mine and reduce the heat to get the smooth thicker consistency.

      That is a great idea. I think I’m going to try that next time. I like the texture but I think it would probably be more like cranberry sauce if I blend it too.

    Awesome I've been looking at several recipes using the Roselle- I think my family will love it we make fresh cranberry sauce

      I grew 10 in the ground they got huge! But I did end up thinning them out and cutting 2 all the way out bc of aphids and a mold
      After pruning they got bigger and healthier! Also I've noticed that picking the calyxes often makes more come out
      I'm right now this evening making the jam
      I was going to use sugar but didn't have enough so I did half sugar half honey

      There are several different varieties. I even saw one that is white. Very cool looking.
