Stewed Turkey Wings Recipe - Chris De La Rosa

  • Learn how to make stewed turkey wings as it's done in the Caribbean with the help of Gourmand award winning Caribbean cookbook author Chris De La Rosa. Chris will teach you this step by step method for stewing in a traditional Caribbean way with a caramelized base. The cut turkey wings are first seasoned in a mix of herbs and spices, then stewed and braised until tender and juicy.
    For this stewed turkey wings recipe you'll need...
    3-4 lbs turkey wings
    3/4 teaspoon salt
    1 tomato
    1 small onion
    3 scallions
    1 birds eye chili (1/4 scotch bonnet)
    3 sprigs thyme
    1 teaspoon Worcestershire sauce
    1 1/4 teaspoon black pepper
    1/2 teaspoon grated ginger
    1 tablespoon chopped shado beni (or cilantro)
    2 seasoning peppers (know as pimento peppers)
    3 cloves garlic
    1 tablespoon veg oil
    1 1/2 tablespoon brown sugar
    3 cups water

    I'm about to cook some stew turkey right now. I'm using turkey thighs and I added some potatoes....will be serving it with rice and peas. Thx for the tips.😊

    My gran used to burn a lot of sugar at once and keep it in a glass bottle in the fridge so she wouldn't have to do it every time she made stew. Memories...thanks Chris.

    Have you tried blending you marinade. It may penetrate the turkey even more liquefied. Nice recipe!

    Did you do something extra in order to season your caldero pot? I have never seen one so dark like that, but I love it! I have some new ones and would like to start from scratch seasoning them the best way.

    Hello Chris, I really enjoy your videos and yes I do try them, but my question is can the tomatoes be omitted from this dish. My husband has chronic kidney failure and can't have tomato products. I look forward to your response.

      Margaret Howard definitely... I'm addicted to tomatoes, so you'll find that I find a way to add them to just about anything I cook. but in this case, you can certainly leave them out.

      The smoke turkey has a different texture compare to the regular turkey. The smoke turkey is great in Nigerian Vegetable stew.

    i'll try making this tonight -it looks great (and more importantly: easy!) -i'll have to skip the spicy ingredients since my mother can't eat them (i'm ok with them, alright)... hope it doesn't affect the flavor's outcome too much

      Yes. When you marinate the meat it will absorb the flavour of the seasonings. That way your food is more tasty and not bland.
