Making Sausages with a Caulking Gun John the Butcher Tutorials

  • This week I am going to show you how to make fresh, preservative free, homemade sausages, without the cost of purchasing expensive sausage making equipment.
    You will need to pop into your local large hardware store to purchase a silicone/caulking gun. The one I am using was from my local Australian Bunning’s store, AU$11:98. www.bunnings.co...
    It comes with 3 nozzles, and you will need to cut one down in order for the sausage meat to pass through. Make sure you leave a minimum of 2.5cms length to push the sausage skin onto, whilst also enlarging the hole big enough to let the meat through. If the cut edge feels jagged, smooth it down with an emery board. If you decide sausage making is not for you, well you still have 2 more silicone nozzles to use for those DIY home improvements.

    I mention in the video I always cook a little of the mixture in a frying pan before going to the effort of making the sausage, to check I love the flavour. I don’t use a lot of salt in the recipe and you may want to adjust this to your preference. If you are planning to cook, then eat the sausages cold, remember our taste buds cannot pick up flavours as well when food is cold, so more seasoning will be required. This recipe has a sweet chili sauce. You don’t have to add this in, I just like the extra depth of flavour it gives. Experiment with the chili, and seasoning, and add just a little at a time and keep frying & tasting. You can also divide your mixture into batches, and make several flavours, just adding to the basic mince and breadcrumb mixture.
    The sausages I am making in the video are beef, traditionally an Aussie favourite. However I will be posting a recipe for pork, and for chicken to follow, which are actually my personal favourites. I have used breadcrumbs instead of rice powder. Rice powder is generally found in Australian sausages. However I actually prefer the lighter fluffier consistency achieved from breadcrumbs, which are generally found in British sausages. You can use either, and rice powder is great if you want a gluten free sausage.
    You can add anything you want to your sausage mixture, as long as the consistency can be easily pushed through the gun into a sausage casing. By grating in some carrots and celery for example, you create great flavour, and sneak a few healthy vegetables into your children’s diet.

    Hi there, from Florida, I enjoyed your video, very good. I never thought about using a caulking gun! I actually bought something from Amazon a few days before I saw your video. It is similar to a caulking gun a plastic tube with 3 different nozzles and a screw in plunger instead of the trigger. It actually worked quite good and is pretty well made. My wife is from Thailand and misses the Thai sausages from her home town, she cooks for a living and we got all of the ingredients and sausage casing's and had an enjoyable evening making this stuff. Hers are a little more spicy then normal she fried up a little at first to let me try it, to make sure they weren't too spicy. My palate is slowly adjusting to spicy Thai. Thanks again.

    Although I've bought LEM Sausage Stuffer (15-Pound) And really loving it..This is the best looking and functioning Small Device for small Stuffing!

    This is brilliant! I don't want a big commercial type mixer in my kitchen, too big and in the way, especially since I can do almost any cooking chore with everyday utensils, a hand mixer, an inexpensive food processor or my bare hands. I gave away a top-of-the-line Cuisinart ages ago because it was so heavy I hated dragging it out and it and the disks took up too much cabinet space. I've been wanting to make sausage for a long time. Off to buy my caulk gun tomorrow! THANK YOU FOR THIS!!!

    As a Brit living in Canada, I miss traditional British bangers so will give this method a try. I recently bought a caulking gun just like the one you're using to undertake an en suite bathroom reno. Coincidentally, it is called a Sausage Gun here in Canada. Go figure!!!

    Have used many caulking guns never one like this. Do they sell silcon in bottles in Austrlia and you just fill the gun tube yourself ? You made some fine looking Sausages , bet they where good.

    I just made some homemade hot dogs and had a terrible time stuffing the casings. It seems emulsified sausages don't really work well with my sausage stuffer attachment to my meat grinder. I've been searching online for an inexpensive solution and Google must have told UA-cam what I was looking for and I came across your video. Well done. I will order my caulk gun soon so I can stuff sausages more easily and efficiently.

    I would recommend a meat plunger to remove the air pockets. It's quicker work and the results are more consistent.

      Hi Mike, yes that would definitely give a more consistent texture, thank you for the feedback, good to pass on. However if you don't want to invest in too much equipment and expense, just pushing the meat into the gun works pretty well for home cooking.

      In the US they are called Sausage Caulking Guns (referring to "sausages" of caulking material not the food). you can find them on amazon for sure.

    It is a really clever idea. The one thing I would be concerned about though, is the plastic and it not being suitable for food.
    Plastics for food and for Kitchen use need to be BPA free As it is harmful.
    It is possible a caulk gun is not going to be BPA free and maybe a harmful plastic for food use.
    That's Just my take on it. It's still a clever idea but I think I won't risk it.

    What an ingenious idea! I had never thought before of using a caulking gun to stuff sausages. Do you suppose this would work with larger fibrous casings to make summer sausage as well?

    I just make them with plastic wrap.. Take a ball of meat put it in the wrap and make sausage shape..

    Do I have to sterilize and clean the gun in anyway if I just bought it straight from the hardware store?

      Yes definitely wash it before use, and wash and thoroughly dry after :)

      Sorry for late reply!! Hope you cleaned the gun! Yes clean, it would be straight from the factory, so other than possibly a little grease and dust it shouldn't be any more unhygienic than any other household implement.

      No need to clean it..it is made for shit that is obviously not food. So sure just use it as is..I see no reason to clean anything you will prepare food with
