What I made for Christmas as a Culinary Student

  • This holiday season, I created an entire Christmas meal for my family in NYC. I've been training as a Culinary student in NYC and now it was time to put some of that to the test. Let me know in the comments below if you'd like me to make videos about any specific recipes featured in this VLOG.

    Also, this video made me think for the first time in my life- "What do Italian people eat for Christmas? Are any of the things they made traditional Christmas dishes?"
    Then, your uncle (I imagine) saying "It doesn't suck" made me laugh because I'm wondering, is that actually a really high, though veiled compliment?

    Now that looks delicious 🤤. My sister and convinced our mother one year to do a Crab boil instead of the normal Turkey or ham dinner. That was so much fun and now I want to go create something in the kitchen 😁

    As a pro chef (with a culinary degree, intermediate and master classes at CIA, Food Network Champ, etc) I feel Id be remiss if I did not comment on a few things you could have done better=Constructive criticism. Overall, you did a great job cooking in large batches for your family. Keep up the good work. This is NOT an easy business, especially for females. I, too, am a female chef and have worked for over 25 yrs in the biz
    -Girl....you work as a chef and work at home with your hair down? You want your hair in the food? Ponytail
    -Never use an immersion blender, robot coupe/Cuisinart, or blender for mashed potatoes. The blades cut the potatoes rather than mash them and this can result in a paste/glue-like consistency. As me, how I know? I once made this mistake less than an hour b4 service when I was private chefing for a dinner party for 30 ppl. The client did not notice but I did and it drove me nuts that my meal wasn't perfect.
    in the future, use a hand-held mixer (preferred bc you can do it in the same pot and not have to wash the bowl) or a standing kitchen aide mixer with either the paddle or whisk attachment.
    -To make less dishes (work smart instead of hard), saute/brown your sausage and cook your onions in the bottom of your marina pot, drain fat and then add red sauce ingredients. The meat will do more to flavor your sauce.
    -When putting so much and or heavy foods in disposable aluminum pans, id double them for strength and insulation. You can always reuse the bottom one. Nothing is a bigger drag than pulling something out of the oven, only to have the pan give way and lose it on your floor.
    BTW your knife skills are off to a very good start. Way to tuck those fingers back and roll your knuckle forward!!!
