I’ll make those and add a little bit of fresh, diced onion in the mix!❤ I would have never thought about collard greens and cornbread in an eggroll, however, I have used leftover turkey, stuffing and cranberry sauce, and made eggrolls out of them, and they are delicious!
Thanksgiving egg rolls are the best. We freeze them when everyone is tired of turkey. Then have them during Christmas week when everyone wants a quick snack.
I never thought of using egg roll wrappers to use up leftovers. It always puts me in a bit of dilemma, when I have such small leftovers, too little for a good serving, too full to eat anymore, and too much to justify tossing out. I hate the idea of wasting anything, but especially food! Such a clever way of using everything, and the possibilities are endless. Thank you for this! God bless you, Ms. Pam!

OMG, made these for lunch today with only 4 changes. Added chopped okra, drained black eyed peas and pieces of BBQ ribs to collards and hw cornbread mixture from our big Sunday meal. Dipped cooked egg rolls into warmed BEPea pot liquor, will make your sauce tomorrow. Sooooo good. Thanks for this great idea.

Now when I was asking my old school father in law about poke sallet, he did call the first boil you dump pot liquor because he said if you drank some of it, it would make you feel drunk because it was toxic, which is why you dump the water of the first boil when making poke.

Pam, you are so smart…I have to try that. My son and I love collard greens. I fix my cornbread…plain cornmeal, water, salt. Put in the oven with oil (a little more than usual). Sooo good.

Been making these for 5yrs now. I do plain, jerk, ginger, bbq. You can also do eggs & sausage, cabbage etc. It never end, try all your leftovers. What about your leftover turkey, yummy. 👀🙂❤️it!
One of my absolute favorite combo's is steamed fresh spinach with garlic paste, seasonings, hot sauce mixed with cornbread. I plan to use this recipe with the egg roll wrappers. GREAT IDEA!!

That looks good, Miss Pam! I prefer lumpia wrappers because they're thinner. But, the use of that pot liquor as a sauce is brilliant! I love to repurpose almost anything into a lumpia wrapper, and fry it. Corned beef, saurkrout, and swiss cheese is awesome in a fried eggroll/lumpia wrapper!
