I have the Spitfire 720 and it’s a great foil, it definitely turns easier and tighter and takes off easier but I really like the speed and glide of the 799, so that has been my go to foil. I like riding smaller foils with less drag and I find that once I get up on foil it’s easy to keep them going. 🤙🏼
I lived a block from where you speak for 20 years. It is under 12 knots, minimum speed for whitecaps on a normal trade wind day. Even to boring to play on an OC1 @@blueplanetsurf

It’s all relative but if I can use a 4M wing on Oahu, I consider it really windy ~15-20 + knots. Most of the time I’m on a 6M wing.
