Made this for my wife. She is definitely a cheese fiend. And she loved it!! I even woke up the next morning craving cheese for breakfast. The chili powder really give it great color and flavor!! Thanks Daddy Jack. We miss you!
I've been making a Rotel-Velveeta queso dip for more than a couple decades. A secretary where I used to work first brought it in with ground beef. That basic recipe is 1 lb Velveeta, 1 can Rotel (tomatoes and green chilies), 1/2 lb cooked ground beef. I liked that, but I like green chilies, so I started adding another can of just green chilies. I would bring that to work for potlucks (twice as much). My 'secret' was I would also add a pickled jalapeño (without the seeds). That was just enough for a 'back' tang--not very hot, but noticeable that something else is in there. A lot of folks started asking for it. After I started using ground buffalo it became an even bigger hit for many. Of course, learning it is buffalo had a few not even try it. You have to taste it with the pickled jalapeño to see how hot it is. If it's not hot at all add more. If it is hot add more only if you want it hot.
