That's just what Linda Caldwell wants to sell you. You should know that wc is not a ring sport but If you want to see it winning fights look up Alan Orr from the UK. Boztepe was a bouncer not a sport fighter.
Actually, NHB IMPLIES a NO-HOLDS-BARRED match, meaning that I can do any technique I want to. Just because you and others misuse the term does not change the actual meaning. if you compare the older styles of wing chun to the modern ones they have almost nothing to do with eachother. for example chi sim or red boat wing chun with the ewto or 'blitzdefense' ....
If you really had an understanding of Wing Tsun (like you seem to be claiming), you would know that arm reach, strength, and size, are not necessarily an advantage. I have all of those things on my Sifu, for example. Leung Ting certainly does not have those things on most of the people he trains. EBMAS is different, yes, but it's not about bullying. It's an attempt to take the core principles of Wing Tsun, and make them relevant in a modern context.

You are building a great two-legged stool. Without that third leg, no matter how good those two legs are it will FAIL as a stool. Effective martial arts takes 3 legs: 1) Instruction - theory and technique 2) Conditioning - endurance, strength, body hardening, etc. 3) Application of 1 and 2 against non-complying, fully resisting opponents The respect, honor, etc. parts are human philosophical traits and are not CRITICAL to becoming a martial artist, but sure help in being a good HUMAN.

i must disagree with what you've said. nobody trains in a way that they believe will get them beat up. everybody does their best. furthermore wing tsun is a derivitive style. you should show respect for the senior students of yip man and his contemporaries and not dismiss what they were taught and their lifetime's experiences as worthless when compared to what Leung TIng teaches. chinese martial culture is respectful of the contributions of past generations for it would be nothing without them.
