An Italian's Favorite Ingredients in America | 5 Favorite American Foods
I tend to film my Italian wife, Eva, eating a lot of new foods here in America that she isn't terribly enthusiastic about. This has unfortunately led many people to believe that she hates ALL American food-but nothing could be farther from the truth!
In this video, Eva shows us five ingredients that are either uniquely American or that she learned to appreciate in the USA, and demonstrates what she likes to cook with them.

SQUASH - "ZUCCA IN SAOR" RECIPE
Bring 2 tbsp olive oil up to medium heat in a skillet. Add 2 1/2 large red onions, sliced. Sautée until tender, about 7-8 minutes. Add 1/2 cup of white wine, 2 tbsp balsamic vinegar, 1 tsp brown sugar, 1/4 cup raisins, 2 tbsp pine nuts, and salt/pepper to taste. Cover and allow to cook for 20-25 minutes. Check occasionally and add a splash of warm water as needed if the onions dry out and risk burning.
Scoop, peel and slice half of a butternut squash into 1/2-inch strips. Lightly oil a non-stick pan and bring up to high heat. Working in batches if necessary, sear the squash strips until they begin to blacken slightly. Cover pan as they cook and slat/pepper lightly. Flip and repeat to sear the other side.
Arrange squash on a platter and top with onions. Allow to cool, preferably overnight, before serving.
CHICKEN - "POLLO ALLA CACCIATORA A MODO MIO" RECIPE
Bring 3-4 tbsp olive oil and 1 crushed clove of garlic up to medium/high heat in a sautée pan. Add diced 1/2 onion, diced 1/2 large carrot and diced 1/2 stalk celery. Sautée for 3-4 minutes. Add a sprig of fresh rosemary and a sprinkle of crushed red pepper flakes to taste. Add 4-5 chicken drumsticks and cook, stirring frequently, for about 5 minutes or until the chicken skin is slightly browned.
Add 1/2 cup of white wine. Allow the wine to reduce briefly, until the smell of alcohol has evaporated. Salt/pepper to taste, and add 1 cup halved grape tomatoes, 1/4 cup sliced kalamata olives, and 1 tbsp capers. Mix 1 tbsp tomato paste into 1/2 cup of water and add into the pan. Lower the heat to bring it to a gentle simmer, cover and allow to cook for 30-35 minutes, or until the chicken is very tender. Add a splash of warm water when necessary if the moisture evaporates.
Serve with a sprinkling of chopped, fresh parsley on top.
LOBSTER - "ASTICE ALLA CATALANA RECIPE"
Steam a large lobster for 15 minutes. While it cooks, slice 1 large red onion and mix with 8-10 oz. (about 1 cup) of halved grape tomatoes. When the lobster has finished cooking and is cool enough to handle, break it down and remove the tail, claw and knuckle meat. Chop and spread over the onions/tomatoes.
Open the lobster’s body cavity and scoop out the “tamale” (green stuff). Mix with 1 tbsp olive oil, 1 tsp soy sauce, the juice of half a lemon, and 1/2 tsp dijon mustard. Drizzle over the salad, along with some extra olive oil. Salt and pepper to taste.
CREAM CHEESE - "PASTA CON PHILADELPHIA" RECIPE
Bring a large pot of water to boil and salt liberally. Add 5 1/2 oz. (160g) dry pasta-we recommend linguine, spaghetti, rigatoni, fusilli or penne-and cook until al dente. Meanwhile, in a large bowl, mix 8-10 oz. (about 1 cup) of halved grape tomatoes with 1/2 cup cream cheese, 1-2 oz. of the pasta water, a pinch of dried oregano, a generous grating of Parmigiano cheese, and salt/pepper to taste.
When the pasta has finished cooking, strain it and add into the sauce. Stir all together and serve immediately.

OMG!!! I am an old man now but, when I was about10 years old, my Italian Grandfather saw me throwing out a large pumpkin. He said with an accent much stronger than Ava's " Danny boy why you throw that away" I said gramps Halloween is over. He said" no that is still good we cook". I was not happy I hate pumpkin but you couldn't say no to grandpa.
He made me cook it .showed thin we fried it, salted it right in the pan,fried onions with it and poured vinegar on it. We just used what we had on hand it was delicious.
I am a grandpa myself but I still miss my grandpa. Thank you for bringing him back to me on the wings of a memory.

I remember how much I cried when I finally got my green card. While missing my home in Colombia, I was so grateful to be welcomed into such an awesome country. Congrats Eva!!!
While I'm sitting here with my wife who is an insanely abusive and controlling person, who decided to take that road one day after marriage, and make the circumstances even worse after receiving her 2-year green card.... Well, $70k in hospital bills later while she just took advantage of me in every way possible...

It‘s even worse when you’re 2nd generation italian like me. I know italy only from holidays and as a tourist. Born and grown up in germany I never learned to speak italian. Now, at an age of>50 I develop my italian side. Grumbling down like the godfather, cooking italian stuff, bothering the family with childhood memories (of 4 weeks per year) :-)

@@Bubu567 So maybe he added more sugar and emulsifiers to an already existing more natural peanut butter?? You can trace simply grinding peanuts into a paste thousands of years. Also the whole of Canada did not invent peanut butter, that would be weird. But the first peanut butter that is closer to what we know today was invented in Canada.
I think the best part of these videos is the JOY in Eva's eyes every time they take a taste and Harper likes it.

I always thought she had more of a distaste for processed foods. She has inspired me to be a little less lazy with my meals.

I’m a Japanese guy from Georgia, USA and they say that Vidalia onions (pronounced Vai-day-li-uh) are sweet like apples from Vidalia, Ga. It’s worth a try to replicate the sweet onion flavor you’re missing. :)
Can confirm. Cooked Vidalia onions are noticeably sweeter than white or red varieties.

Honestly, that shit is such a turn off. Like, “nobody told you that you had to give up your identity. Just learn to embrace your new home”. In fact, if she lost her Italian side, she’d have to leave, rediscover it, then return.
We Italians can also live on another planet but we remain Italians in our hearts for all our life. And I guess this also applies to an American. In fact, I think that for many Americans, who always have the American flag in front of their houses and almost everywhere, this is even more true.

If Eva likes sweet onions, try to get some genuine Vidalia onions, you can eat them like an apple, too.
I think the Walla Walla onion is also a sweet one. You need to get one/both of those for Eva to try. I think she would be impressed!
sweet onions, are usually grown in soil regions that are noticabily low in available sulphur. the onions can't make the sulphur compounds that make them so sharp, so Walla Walla sweets and Vidalia onions are sweet because of that. give those a try, or perhaps try growing your own red onions in a potting mix insted of the ground, and see how you like them.
Came to say this. I haven't tried them, but have seen the videos of people biting it like an apple
I'm curious about why she chose to cook red onions until they were an ugly, grey mush. That pays no respect to such a beautiful ingredient. ANY other onion would have been a better choice. Red/purple onion is so lovely when used raw.
@@BlindMellowNellie I agree SO much. I NEVER cook with red onion, unless..somebody uses my sweet yellow onions, and they're all that's left. but red doesn't do so well in heat, and that...ugly...purpley brownish color...blech. red onions are for burgers and salads. raw only.
I lived close to Nampa Idaho in the past. The smell of onions as you cross over the Snake into Nyssa could knock you back into your car seat from the powerful smell of onions. Not sure if they were Walla Wallas, but they sure smelled!
@@elonmust7470 well, you can plant a "Walla walla" onion anywhere, but walla walla Washington, or Vidalia Ga. are where those onions originate from. so it's unlikely they have low sulphur soils. that...and onions are still onions. low sulpher, and mild means they're jalapenos, where everything else is habanero. they're not bell peppers, and will never be bell peppers.

Vidalia, Georgia also has sweet onions like that. Google Vidalia onions and you can get them in the US. They are yellow, not red.
That lobster dish with red onion has to ruin the dish.

@@oneitalia2312 I am from SE GA and I have had raw Vidalia onions plenty of times. No one said any of the onions were as sweet as an apple. Harper said the onion was sweet enough to be eaten like an apple. It is not the same thing as saying this onion is as sweet as an onion.
Congrats on green card, it’s an important step. Now Eva got to try ribs... as a French coming in the US many moons ago, it is the dish that I use to show French people that there are some great native foods in the US besides hamburgers.
Yes! I would love to see Eva try some really GOOD American food. How about: a rich, satisfying New England clam chowder; authentic Southern style fried chicken, mashed potatoes and collard greens; REAL macaroni and cheese, cooked by a church lady; some New Orleans food like gumbo and jambalaya; and maybe some interesting California-style fusion food like Korean tacos?
I am an average cook and can do pretty well following a recipe, yet, this series is AMAZING. I can’t wait to level up in my Italian recipes and know it’s from an actual Italian who clearly loves food and knows what she is doing. As a Spaniard living in the UK, I've empathise a lot with Eva. I would like to point out that a lot of the "ingredients" that Eva hated were mostly highly processed ones, which are also very unhealthy.
I actually burst out laughing when I saw one of the comments said ‘American cuisine’ hahaha. Anyway I’ve never got the impression she hates American food. I always felt it was the fact she was against the lazy quick ingredients and processed foods. Love the channel, all the way from Ireland.
Spreadable Philly cream cheese is quick and lazy, and more processed than regular cream cheese. It is not a crime to admit to sometimes using convenience products, but it's not fair to fault others for doing the same. Taste is subjective, anyway.
I get the "American cuisine" joke, but the US really has some good food. The biggest problem is that Americans never really cared about developing any kind of culture/tradition around food and instead of that they stuck with fried chicken, fried potatoes, burgers, hotdogs and bastardizing (and fat-stardizing) real food from other countries.
Granted, there's not much to say about American food, but since it's a really big country, there is no actual "American cuisine" but rather a big number of cuisines, like New England cuisine, Mid West cuisine, etc.
In my opinion some of the most delicious dishes in the US come from the south, like gumbo, jambalaya, creole shrimp and bananas Foster. So maybe just stick to Louisiana creole cuisine for actually good American food :)

American cuisine exists, and it’s regional as well (Southern, Appalachian, Mid-Western, New Mexican, Tex-mex, New England, etc etc). So I’m not sure why you found that funny, I’m guessing you’ve never left the US. When I lived abroad to Turkey (now referred to as Türkiye), I missed New Mexican green Chile sauce, red Chile, tamales, posole, breakfast burritos, etc. because they aren’t available the world over.
ETA: I thought you were an ignorant American who has never left the states and so was ignorant enough not to realize our food isn’t everywhere, but you’re Irish and so ignorant you don’t even know American cuisines exist. As if y’all would have any cuisine if it wasn’t for the indigenous people of the America’s cultivating potatoes. I’ve met lots of Irish people who have never even had maple syrup, but yeah, we don’t have a distinct cuisine. 🙄 And before you say tamales are Mexican, this used to be Mexico and our food cultures have strong similarities to Northern Mexican food (I’m pointing that out because you’re probably unaware of Mexico’s diverse regional cuisines as well), and even Navajos made tamales called “kneel down bread”. I also forgot Cajun cuisine in my list, another very important regional American cuisine.
And you Euro trash call us dumb….. 🙄

I can't imagine anything else now besides Harper going all out and making homemade tonkotsu lol. Making all the fixings and components, the broth, the noodles, the chashu, all in an unprecedented crossover.

Yeah get her to try plantain that’ll be a trip. I’d be interested to see what she makes of Jamaican food and Southern soul food, it will be a whole different world but mind blowing levels of sumptuous American indulgence & comfort. I especially love the way sweetness of plantain contrasts with curry
Yes and Ackee and salt fish, jerk chicken, curry goat, calaloo and more.. be interesting to see an Italian' s thoughts on that
So many ways to prepare plantains. I love them all.
Fried green plantains and fried sweet plantains. The green are fried twice after mashing and called Tostones. The sweet is like sugar candy. The blacker the peel the sweeter the plantain. Check on you tube they show how to make them. I love these. Congrats on green card. You got it fast. You’re you tube channel I’m sure helped. PS: loved how you ended the segment.
As Eva selected her ingredients, I realised that she could use 3 of them in a single dish: West African chicken peanut stew. Instead of sweet potatoes, she could use the butternut squash. Then, she has chicken and peanut butter. She'd just need some onions, garlic, eggplant, carrot, red pepper, fresh ginger and canned tomatoes, plus seasonings.
I'm an American who lived in London for a few years and one day in the office at lunchtime I pulled a toasted peanut butter and honey sandwich out of my lunch bag and one of my English co-workers asked, What's that? So I told her and she said she'd never tasted peanut butter! So I gave her half and the look on her face when she bit into it and experienced all that gooey, sweet/salty goodness was PRICELESS.

My favorite sandwich is Jif extra crunchy PB with rinsed blueberries that have been cooled in the fridge on any bread with a soft fluffy interior. Amazing.

Ah, the green card process. My very Danish husband got his about 35 years ago, but I still remember it like it was last month. It was during Reagan’s amnesty period, so we had to get in line at midnight the night before because they only took the first twenty people each day. We took a thermos of coffee, a blanket, and some playing cards, and we gave the blanket to an older Russian woman…No matter when or where you do these processes, they are bizarre and overly full of unnecessary bureaucracy. HUGE and very belated congratulations, Eva!!!

I tried your "Zucca in Saor" recipe tonight - yes, it was delicious! I skipped the raisins and brown sugar (I didn't have any), and it still tasted like savory-sweet-sour heaven.
