I've been watching Toycat for so long, memorable moments include:
- Switching from Console Edition to Bedrock, and suddenly having loads of world to explore
- Updating the cave house
- Building the museum (partially seen here in the 2015 version)
- Torching-up the desert
- Covering the End Island in glass
I also vaguely remember a video with Grian, where he tried to improve some Toycat buildings, but that may have been something different
