I love Hoi An. Locally grown vegetables in Hoi An are all organic. The deliciousness cannot be found anywhere else. Hoi An is a magical place. Just go and see this place ... there is no equal globally.

Vietnam has won a record for a country with with the biggest number of Noodle dishes.. nearly 300 difrerent noodles across the country. Many are even better than Pho. My favorite is BUN RIEU (Boon real) Hanoi (when Im sick or tired I always crave its delicate flavor).

This dish is an example of the cultural exchange of Hoi An trading port (Noodle string shape is similar to Udon noodle of Japan, the meat ingredient - Charsiu meat from Chinese, ash treated powder for the noodle string, herb green mix with mung bean sprout from Vietnamese, water from Champa well) For the MI QUANG (MI WANG) noodle, you should add the broken rice cracker (bánh tráng nướng bẻ vụn) to your bow before eating. It will bring a mix of textures that would make you interested more. (Some other versions of MI WANG will have the dyed yellow noodle string (from Turmeric) that brings more colorful and tasty to the dish)
Watching these videos made me realized that I wasn't traveling smart. I traveled a lot around SEA including Vietnam. But stayed in the city, eat in the hotel, go to every overcrowded beach etc. When I could enjoyed the rich culture with the locals, visit the markets, explore the village as hidden gems are usually found in these areas.
The Vietnamese dish "cao lau" has a very majestic and interesting history. The dish will be served on the first floor of the shop in feudal times and you can see the scene of people walking below. Eating is also named after sitting upstairs

Mì Quảng is one of my favorites. Bún bò Huế is fairly well known now but mì Quảng is still a bit of a hidden Central Vietnam gem.
Many hidden vietnam dishs will show all over the world , one by one. Because there are a hundreds of delicious noodle dishs.
