you can use silken tofu chopped small into some vegan chicken stock and spring onion greens and a tin of creamed corn, pepper. you can add noodle for long soup or not for short soup.
You can also simmer/boil tofu slabs for about 20 minutes and it will really pick up the flavor of whatever broth you are using and also changes the texture.
Chef Aj you should introduce her to DR golden. Kathy could teach her how to cook and Dr Goldner could teach her how to health with the miracle metabolism smoothies.
