- We have a HUGE announcement . We are adding on to our family! It's Christmas time here at our Off-Grid homestead, and we take some time for some Christmas activities. Along with the holiday cheer, there will (of course) still be some projects. We are excited to share our big news and to share some of our holiday with you all!

Now we know why you need a 4800W solar system to power the Christmas decorations. Stetson shouldn't be afraid outside, it's all lit up by decorations. Just think, next year you'll be welcoming your first baby Clyne. My sister got a rescue dog that was supposed to be 35 pounds too. Then found out the parents were great dane and mastiff. 110 pounds 1 year later.

Love the pup! Merry Christmas to you all. I'm not sure if you are aware or not but here in northeast PA they tap shagbark hickory trees for syrup the way they do maples. The flavor is a bit different than maple but still sweet and tasty. Like birch sap, it takes a lot more sap to make a gallon of syrup, around 120 gal of sap per gal of syrup, because the sugar content isn't as high.
