- Ingredients:
80% 240g bread flour (面包粉)
10% 30g wholemeal flour (全麦面粉)
10% 30g rye flour (黑麦粉)
20% 60g levain (酸种)
75% 225g water (水)
2% 6g sea salt (海盐)
20g toasted white sesame seeds
10g toasted black sesame seeds
Total bulk 4.5 hours at 29°C
Baked in Dutch oven 250°C for 25 minutes covered, 220°C 15 minutes uncovered

Beautiful bread. May I know whether you use the starter directly from the fridge ( which could have been fed and fermented the day before) or those newly fermented at room temperature? Would the outcome be different if use the starter from the fridge. Please advise. thank you.

3. Curious: What is the ideal Required room temperature, when we keep the dough for proofing? (Our place normal temperature varies from 27 to 38° Celsius).

@@KathrineKwa hi shifu..if my sourdough retart in fridge at 2.5degrees..not.4degreees...shld i extend me fridge retard time or just 12hour is enough?....and after taken out from fridge..the dough will relax and extend till fulll in the basket?
