Did u used dairy whipping cream while melting white chocolate?
Warm melted chocolate mixture need to be pouring into whipped cream or cooled mixture?

Yes you can heat non dairy whipping cream
Any whipping cream with a good fat % works
The mixture needs to be cooled for 10-15 minutes. If you pour the hot mixture, it will melt the whipped cream. Once the chocolate mixture becomes a little thick, you can beat it
