You can search it up for details but there were 2 helm wheels in order to maintain balance/stabilization (Not sure about that) and due to the fact that you'd may want to steer from the "high" side when the vessel is heeling (leaning) over from the wind. Besides; A wheel big enough to be reached from both sides of the boat may be too big to be practical, so two, linked, ones are used. You can steer from either one of them.

The Dutchman was not turning to port (left) to catch up to them. It turned starboard (right) in order to maintain a line and therefore, started using the triple/triplet guns.

Tecnically it is correct but historicaly not, isn't it? Remember the "mistake" at the Titanic Movie that wasn't a movie mistake, because it was historical correct. The Captain gives the order Hard to Starbord but (now comes the clue) the helmsman turn the wheel to the left (so to the port side) and the ship also turns to the port (left side) - this is historical correct because it was a tiller order! so the commands was practicaly mirrored (also so called false way order i guess?) because in the early sailing history the ships had tillers, so if you want that the ship turn to left, you had to push the tiller to right, that is why the captain give the order "hard to starboard (right)" if he want to turn the ship to port (left) because he need to push the tiller to starboard (right) Late ships had a wheel to serve the tiller and the rudder, but the order was still the same so the helmsman still need to turn the wheel in the opposite direction as the captain order.
