Yeah it´s a matter of preference, i put it together in the pan with the sauce so that it will be lost in the plate and i have to for it :) Important is that you take it of from the pan before you add the tomato sauce otherwise the consistency will be like it would be boiled and not crunchy anymore.
Well easy explained. Though i prefer to put the Guanciale on the pasta at the end.
