Personally, I think the owner used vegans to gain more popularity. Hating on vegans is the new "woke/cool/fashionable thing". My question is: Do you think this helped his business more or less? I know the answers will be subjective, but objectively, how does something like this affect the business considering that the owner promoted the lack of ability to make a risotto, lied to a customer and complained about it on a show vs animal rights activists protesting?

'Do we prohibit the practice of venom extraction from snakes even though the serums developed from them have become vital in the treatment of human diseases?'.

I think many did have to be omnivore, due to shortage of fruit, or not living in tropical areas. Many can digest dairy / meat, etc - doesn't mean this is right or best for us in the long term.
