Yes, absolutely. I have done batches of cherry tomatoes this way. I’ve roasted them &/or brought them to a brief simmer just to soften. Then I mill to remove seeds & skins. I’ll simmer the processed purée to my desired consistency and processed them in the water bath canner. If you have questions, please don’t hesitate to ask! 🍅
