  • Ingredients (Serves 4):
    Tomatoes: 4 (diced or wedged)
    Cucumber: 4 (sliced or diced)
    Red onion: 1.5 small (thinly sliced)
    Green bell pepper: 0.5 (cut into thin strips or cubes)
    Black olives or Kalamata olives: 8 -15
    Feta cheese: 100g (cubed or sliced)
    Extra virgin olive oil: 3-4 tablespoons
    Fresh lemon juice or balsamic vinegar: 1 tablespoon
    Dried oregano: 1 teaspoon (Optional)
    Salt and black pepper: to taste
    Instructions:
    Prepare the vegetables:
    Chop the tomatoes, cucumber, onion, and bell pepper to your desired size.
    Remove the pits from the olives if needed or leave them whole.
    Combine the ingredients:
    In a large bowl, mix the chopped vegetables together.
    Add the feta cheese on top (either cubed or as a large block).
    Make and add the dressing:
    In a small bowl, whisk together the olive oil, lemon juice or balsamic vinegar, oregano, salt, and pepper.
    Pour the dressing over the salad.
    Garnish and serve:
    Garnish the salad with a few extra olives or fresh oregano leaves if desired.
    Serve immediately to enjoy the freshness of the ingredients.
    Tips:
    If the raw onion flavor is too strong, soak the slices in cold water for a few minutes to mellow the taste.
    Pair this salad with some pita bread or crusty baguette for a complete meal.
