      I think that spectacular egg might be the deciding factor in me favouring the shoyu ramen over the shio on this occasion! Asakusa goes on the 'must visit' list for Tokyo, for sure... It's going to be a long list 😁

      ​@@MrLGDUK Although most will choose one or the other (shoyu with the egg or shio with the ume), you could add the big egg to the shio too! Asakusa is a great Tokyo neighborhood...they march to a different beat 😃

    Ramen looks wonderful. I have been to Japan five times and lived there for three years, but Asakusa was the first time I ever had the no gaijin treatment. They were not militant about it, but certainly had zero desire to have me there. The neighborhood is really impressive though. First time I ever had Fugu was there too. It was terrible.

      You're a Japan veteran! I totally get it and can relate - Asakusa can be strange like that. While it has that old town charm, people in Asakusa never leave Asakusa and are fiercely proud of Asakusa, to the point where they're territorial. Contrast that with other areas...in Shibuya, no one is actually from Shibuya 😅. At Yoroiya (the featured ramen shop), you won't have any of that - they are proud Asakusans but are wonderful.

    I wanna try that shio ramen, with the umeboshi in the middle. I am craving a pure bone broth with a simple salt seasoning.

    Oh, man. That looks so good! How do they make eggs with 2 yolks? I like that you highlighted another special dish they do (dumplings).

      I believe the breeders delay the first yolk in the oviduct and while this happens the next yolk comes out, creating two. Then the shell is formed.
      I don't always eat gyoza / dumplings with my ramen, but definitely a must eat there 😃

      As far as I know, the breeders somehow delay the first yolk in the oviduct and this leads to the hen to "doubling up" when the next yolk comes in. The zaru ramen is excellent!

    I only got to try dipping ramen once when I was in Japan and it was mind blowingly delicious. It was in Nara from a shop called Genkishin.

    Zaru ramen for sure! I am so confused - what is the difference between zaru ramen and tsukemen? Base of the broth? (I feel very stupid asking this question, but I need to know!!)

      Great question - not a stupid one at all!! They're essentially the same, in that they're both dipping ramen. But..."zaru ramen", "tsuke soba" - when ramen shops use these terms they're normally serving an older style of tsukemen, just like in the video. Modern "tsukemen" (after the early 2000s) on the other hand is normally quite thick and rich!

    Woah! Never seen Yuzu being used in ramen like that before, does the sweetness overpower anything? Or is it more citrus lemon flavor to cut through some of the salt? That's awesome

      With the amount of yuzu citrus on top, it's just right 👍 It's cutting through the salt / the richness on the soup, just as you mentioned!

      They come from a special breed of chickens from Iwate prefecture here. Not sure how exactly they bred them to achieve this.

      The yuzu itself? Usually yuzu is left by itself so that shining citrus flavor can shine through.

    Is there a secret into a good slurping of noodles, but not making a mess of your clothes when slurping?

      I think slurping quickly and in a straight line (as much as possible) helps. Perhaps also keeping your head close to the bowl too. But a lot of ramen shops actually offer big bibs for customers! This is the biggest help 😅
